In this study, viscera was subjected to hydrolysis by alkalase, pepsin and flavourzyme commercial enzymes. Recycling efficiency and degree of hydrolysis obtained proteins and antioxidant activity DPPH in different conditions of the hydrolysis process at 15, 30, 60 min and three temperatures of 35, 45, 55 °C and between three enzymes with three replicates reviewed and compared. To investigate the existence or absence of significant differences between the values of each index, two-way analysis of variance and comparison of mean traits were used by Duncan test. For all enzymes used in this study, by increasing the time and temperature of hydrolysis, the amount of protein recovery and degree of hydrolysis and antioxidant activity increased, and the highest of these two indices for all three enzymes at 55 °C and in the time was 60 min and the lowest was observed at 35 °C and at 15 min. Also, the results showed that among the three enzymes studied, alkalase was similar in temperature to different pepsin and flavourzyme enzymes, with protein recovery and higher degree of hydrolysis and antioxidant activity. The highest protein digestion was related to the alkalase enzyme at 55 °C and 60 min (54.52±0.11%), and the lowest was obtained at 35 °C and 15 min. The results showed that the use of alkalase enzyme to produce hydrolyzed protein from grass carp was better in terms of recycling efficiency and degree of hydrolysis and antioxidant activity.}, keywords = {Enzyme,Viscera,Hydrolyzed protein,Grass carp}, title_fa = {اثر آنزیم، زمان و دما بر برخی ویژگی‌های پروتئین هیدرولیز‌شدۀ امعاواحشا کپور علف‌خوار}, abstract_fa = {هدف از تحقیق حاضر بررسی اثر آنزیم، زمان و دما بر ویژگی‌های پروتئین هیدرولیزشدۀ امعاواحشا کپور علف‌خوار (Ctenopharyngodon idella) بود. دو شاخص راندمان بازیافت و درجۀ هیدرولیز پروتئین‌های حاصله و میزان فعالیت آنتی‌اکسیدانی در سه زمان 15، 30 و 60 دقیقه و سه دمای 35، 45 و 55 درجۀ سانتی‌گراد و بین سه آنزیم آلکالاز، فلاورزایم و پپسین مورد مقایسه قرار گرفت. برای تمام آنزیم‌های مورد استفاده با افزایش زمان و دمای هیدرولیز میزان بازیافت پروتئینی، درجۀ هیدرولیز و فعالیت آنتی‌اکسیدانی افزایش یافت و بیشترین مقدار این دو شاخص برای هر سه آنزیم در دمای 55 درجۀ سانتی‌گراد و در زمان 60 دقیقه و کمترین آنها نیز در دمای 35 درجۀ سانتی‌گراد و در زمان 15 دقیقه مشاهده گردید. در بین 3 آنزیم مورد بررسی، آلکالاز در شرایط دمایی یکسان و در زمان‌های مختلف نسبت به آنزیم‌های پپسین و فلاورزایم دارای بازیافت پروتئینی و درجۀ هیدرولیز و میزان فعالیت آنتی‌اکسیدانی بیشتری بود. آنزیم آلکالاز بیشترین بازیافت پروتئینی، درجۀ هیدرولیز و فعالیت آنتی‌اکسیدانی را در دمای 55 درجۀ سانتی‌گراد و زمان 60 دقیقه (0/11±54/52 درصد) و کمترین مقدار این پارامترها را نیز در درجه‌حرارت 35 درجۀ سانتی‌گراد و در زمان 15 دقیقه نشان داد. باتوجه‌به راندمان بازیافت، درجۀ هیدرولیز و فعالیت آنتی‌اکسیدانی، آنزیم آلکالاز کارایی بالایی جهت تولید پروتئین هیدرولیزشده از ضایعات ماهی کپور علف‌خوار داشت.}, keywords_fa = {آنزیم,امعاواحشا,پروتئین هیدرولیزشده,کپور علف‌خوار}, url = {https://journals.rifst.ac.ir/article_74194.html}, eprint = {https://journals.rifst.ac.ir/article_74194_33883ee2ddc56b12c1ccd3ea86e0f40a.pdf} }
