Formulation containing PGPR emulsion, cocoa butter, water, isomalt and maltitol was added to a chocolate with a particle size of 20 and 30 m. Texture, melting point and sensory properties (color, odor, taste, oral sensation and overall acceptance), moisture content and water activity were analyzed for chocolate formulated with PGPR emulsion, cocoa butter, water, isomalt and maltitol. The chocolate was compared with the control chocolate. The results showed that the use of maltitol and isomalt significantly increased the moisture content and water activity of the samples (p < /em><0.05). Significant differences were observed between the treatments in terms of hardness of the tissues, which indicated a decrease in hardness by increasing the emulsion of sugar alcohols (p < /em><0.05). Sensory properties showed that maltitol was similar to the control sample in terms of flavor and had a higher rate of oral melting compared to isomalt in all concentrations in color, all treated samples were brighter than control samples. There was no significant difference in the overall acceptance of the samples (p < /em>>0.05). In general, due to the insignificant effect of this emulsion formulated in the overall acceptance of sensory properties and its significant effect on increasing the melting point, these materials can be used in the production of heat -resistant chocolate in tropical areas.}, keywords = {chocolate,Isomalt,Maltitol,Melting point,particle size}, title_fa = {اثر نسبت امولسیون حاوی قندهای الکلی و اندازۀ ذرات بر مقاومت حرارتی و برخی ویژگی‌‌های فیزیکی و حسی شکلات}, abstract_fa = {در این مطالعه، اثر نسبت امولسیون حاوی قندهای الکلی و اندازۀ ذرات در افزایش نقطۀ ذوب شکلات در شرایط نیمه‌صنعتی بررسی گردید. به شکلات مرکب تهیه‌شده با اندازۀ ذرات 20 و 30 میکرون، فرمولاسیونی حاوی امولسیفایر PGPR، کرۀ کاکائو، آب، ایزومالت و مالتیتول اضافه‌شده و ازنظر بافت، تغییرات نقطۀ ذوب و خواص حسی (رنگ، بو، طعم، احساس دهانی و پذیرش کلی)، اندازۀ رطوبت و میزان آب فعال مورد بررسی قرار گرفت و با شکلات شاهد مقایسه شد. نتایج نشان داد که استفاده از مالتیتول و ایزومالت به‌طور معنی‌داری سبب افزایش میزان رطوبت و فعالیت آبی نمونه‌ها شد (0/05>p ). ازنظر سختی بافت، تفاوت معنی‌دار در بین تیمارها مشاهده گردید که بیان‌کنندۀ کاهش میزان سختی با افزایش امولسیون قندهای الکلی بود. بررسی ویژگی‌های حسی نشان داد که مالتیتول ازنظر عطروطعم مشابه نمونۀ کنترل می‌باشد و امتیاز بالاتری ازنظر رفتار ذوب دهانی در مقایسه با ایزومالت در تمامی غلظت‌های مشابه کسب نمود. ازنظر رنگ تمامی نمونه‌های تیمارشده روشن‌تر از نمونه‌های کنترل بوده و ازنظر پذیرش کلی تفاوت معنی‌داری در میان کل نمونه‌ها وجود نداشت (0/05>p ). به‌طورکلی باتوجه‌به اثر غیرمعنی‌دار این امولسیون فرموله‌شده در پذیرش کلی خواص حسی و اثر معنی‌دار آن در افزایش نقطۀ ذوب، می‌توان از این مواد در تولید شکلات مقاوم به حرارت، در نواحی گرمسیری استفاده نمود.}, keywords_fa = {اندازۀ ذرات,ایزومالت,شکلات,مالتیتول,نقطۀ ذوب}, url = {https://journals.rifst.ac.ir/article_90993.html}, eprint = {https://journals.rifst.ac.ir/article_90993_10cb306ea094c5acc839e33db6cf152d.pdf} }
