تحلیل تجربی اثر سپر حرارتی بر کاهش مصرف انرژی در ظرف پخت غذا
هدف این تحقیق کاهش مصرف انرژی در فرایند پخت و پز ازطریق استفاده از سپرهای حرارتی پیرامون ظرف غذاست. در این تحقیق که برای اولین بار و بهصورت آزمایشگاهی انجام شده است اثر سپر حرارتی باتوجهبه پارامترهای هندسی ظرف (قطر و ارتفاع) و مقدار سیال، بر بازده حرارتی قبل و بعد از جوشش مورد بررسی قرار گرفته است. نتایج این تحقیق نشان داد که در مرحلۀ قبل از جوشش استفاده از سپر حرارتی مستقل از هندسه و میزان سیال میباشد و میتواند بهطور متوسط 20 درصد انرژی مصرفی را کاهش دهد. همچنین نشان داده شد که اثر سپر حرارتی در مرحلۀ جوشش تابعی از ارتفاع مایع درون ظرف میباشد و برای یک مقدار مشخص انرژی حرارتی ثابت، با افزایش ارتفاع ظرف بدون محدودیت افزایش مییابد. درنهایت یک محاسبۀ اقتصادی برای خانوارهای ایرانی نشان میدهد که استفاده از سپر حرارتی در فرایند پخت و پز خانگی، موجب صرفهجویی در مصرف منابع انرژی گرمایی به ارزش 12/5 میلیون بشکه نفت در سال خواهد شد.

تأثیر افزودن کازئینات سدیم و آنزیم ترانسگلوتامیناز میکروبی بر خواص رئولوژیکی، فیزیکی و حسی نان بدون گلوتن بر پایۀ آرد ذرت
بیماری سلیاک یک اختلال شایع خودایمنی است که با دریافت گلوتن برانگیخته میشود. در این مطالعه آرد ذرت بهعنوان آرد فاقد گلوتن مورداستفاده قرار گرفت لذا بهمنظور تقلید ویژگیهای گلوتن، استفاده از آنزیمهایی با قابلیت تشکیل پیوند عرضی مانند ترانسگلوتامیناز میکروبی در سطوح (0، 0/75 و 1/5 درصد) همراه با کازئینات سدیم در سطوح (0، 3 و 6 درصد) بهعنوان جایگزین گلوتن مورداستفاده قرار گرفت و تأثیر آنها بر ویژگیهای رئولوژیکی خمیر، فیزیکی و حسی نان فاقد گلوتن ذرت موردارزیابی قرار گرفت. نتایج نشان داد که با افزایش فرکانس زاویهای هردو مدول ذخیره و اُفت افزایش یافت. بیشینۀ حجم مخصوص نانهای تولیدی از ذرت (0/02±a1/460) زمانی بهدست آمد که میزان غلظت آنزیم ترانسگلوتامیناز و کازئینات سدیم در بیشترین مقدار قرار داشت. افزودن آنزیم و کازئینات سدیم به فرمولاسیون نان موجب کاهش اُفت پخت نسبت به نمونۀ فاقد این مواد گردید. افزودن آنزیم ترانسگلوتامیناز میکروبی تا سطح 0/75 درصد منجربهکاهش شدید میزان تخلخل گردید و سپس با افزایش غلظت آنزیم، میزان تخلخل نیز افزایش یافت. افزودن 3 درصد کازئینات سدیم به همراه 0/75 درصد آنزیم ترانسگلوتامیناز میکروبی به نان بدون گلوتن منجربه ایجاد بیشترین سختی نان گردید. میزان پذیرش نهایی نمونههای تولیدی با افزایش غلظت آنزیم و پروتئین کاهش یافت بهنحوی که نمونههای فاقد این دو ترکیب، بالاترین امتیاز پذیرش نهایی را بهدست آوردند. درنهایت باتوجهبه نتایج بهدستآمده میتوان بیان داشت که استفاده از 0/75 درصد آنزیم ترانسگلوتامیناز میکروبی و 3 درصد کازئینات سدیم برای تولید نان ذرت بدون گلوتن میتواند مفید واقع شود.

بررسی تأثیر ضخامت پلیاتیلن، ترکیب گازی و دما بر زمان ماندگاری و کیفیت توت فرنگی
در این پژوهش، تأثیر بستهبندی تحت اتمسفر اصلاحشده بر کیفیت و طول عمر توت فرنگی موردبررسی قرار گرفت. برای بستهبندی توتفرنگیها از سه ترکیب گازی (هوا، ترکیب گازی اول: 75 درصد نیتروژن + 15 درصد دیاکسیدکربن + 10 درصد اکسیژن و ترکیب گازی دوم: 75 درصد نیتروژن + 10 درصد دیاکسیدکربن + 15 درصد اکسیژن)، کیسههای پلیاتیلن در سه ضخامت 30، 50 و 90 میکرون و دو دمای نگهداری 1±4 و 1±8 درجۀ سانتیگراد استفاده شد. تأثیر تیمارهای یادشده در قالب طرح کاملاً تصادفی با آزمایش فاکتوریل در سه تکرار بر پارامترهای درصد کاهش وزن، سفتی بافت، مواد جامد محلول، اسیدیتۀ قابل تیتراسیون و pH در توتفرنگی در پایان روز 20ام از زمان نگهداری بررسی شد. نتایج آنالیز واریانس نشان داد که تأثیر ترکیب گازی و دما بر تمامی فاکتورهای مورد اشاره در سطح 1 درصد معنیدار است، ولی اثر ضخامت پوشش پلیاتیلن فقط بر درصد کاهش وزن، مقدار مواد جامد محلول و اسیدیتۀ قابل تیتر در سطح 1 درصد معنیدار بود. در بین دو دمایی که آزمایش در آن دامنه صورت گرفت، دمای 4 درجۀ سانتیگراد بهدلیل کاهش تنفس، تبخیر و تعرق در حفظ خصوصیات کمی و کیفی توتفرنگی بهتر از دمای 8 درجۀ سانتیگراد عمل کرد. پوشش پلیاتیلن در ضخامت 90 میکرون بهدلیل نفوذپذیری کم و حفظ رطوبت اطراف محصول درون بسته خصوصیات کیفی و کمی محصول را بهتر حفظ نمود. ترکیب گازی اول بهدلیل داشتن CO2 بیشتر و کاهش تنفس برای حفظ خصوصیات کیفی و کمی توتفرنگی مناسبتر است. درنتیجه توتفرنگیهایی که در پوشش پلیاتیلن با ضخامت 90 میکرون و ترکیب گازی اول در دمای 4 درجۀ سانتیگراد بستهبندی شدند بهترین کیفیت و بالاترین ماندگاری را داشتند.

بررسی پایداری اکسیداتیو روغن سرخکردنی مخلوطشده با روغن دانۀ خرفه و روغن ذرت
یکی از راههای پایدارسازی روغن سرخکردنی، بهمنظور حذف آنتیاکسیدانهای سنتزی، افزودن روغنهای با ترکیبات ضداکسایشی و پایداری اکسیداتیو بالا میباشد. هدف از این پژوهش، ارزیابی کیفی مخلوط سه نوع روغن سرخکردنی (آفتابگردان، لادن و ایران) در اثر افزودن روغن دانۀ خرفه و ذرت طی 12 ساعت سرخکردن در دمای 2±170 سانتیگراد بود. برای این منظور روغن سرخکردنی مخلوط حاوی روغن دانۀ ذرت و خرفه با نسبتهای (15:15:70 وزنی/وزنی) تحت عنوان مخلوط 1 و روغن سرخکردنی مخلوط حاوی روغن دانۀ ذرت و خرفه با نسبتهای (10:15:75 وزنی/وزنی) تحت عنوان مخلوط 2، روغن دانۀ ذرت، روغن دانۀ خرفه و مخلوط سه روغن سرخکردنی از لحاظ شاخصهای کیفی (پراکسید، پاراآنیزیدین، توتوکس، ترکیبات قطبی کل، پایداری اکسیداتیو و دیانهای مزدوج) مورد ارزیابی قرار گرفتند. در ابتدا میزان فعالیت آنتیاکسیدانی روغن دانۀ خرفه موردبررسی قرار گرفته و 0/19±52/9 درصد اندازهگیری شد. مقایسۀ بین دو مخلوط روغن سرخکردنی نشان داد مقادیر شاخصهای پراکسید، پاراآنیزیدین، توتوکس و دیانهای مزدوج مخلوط 1 و مخلوط 2 به ترتیب (25/83 میلیاکیوالان بر کیلوگرم، 80/63، 132/29 و 15/01 میکرومول بر گرم) و (28/13 میلیاکیوالان بر کیلوگرم، 85/73، 141/99 و 17/17 میکرومول بر گرم) بود که تفاوت قابل معنیداری (0/05>P) با روغن سرخکردنی و سایر روغنها داشت، نسبت بالاتر روغن خرفه در روغن سرخکردنی مخلوط 1، پایداری اکسیداتیو این روغن را نسبت به روغن مخلوط 2 بالا برده و روغن دانۀ خرفه از تخریب زود هنگام آن در برابر حرارت ممانعت میکنند.

تعیین منشأ گیاهی عسلهای رایج استان خراسان رضوی براساس خصوصیات رنگ، شوری، مقاومت الکتریکی و مواد جامد تام با استفاده از روشهای کمومتریکس
در حال حاضر اصالتسنجی در مواد غذایی یک چالش مهم در بازاریابی و تولید آن میباشد. هدف از این مطالعه تقسیمبندی انواع عسل (آویشن، اقاقیا، گشنیز، زرشک، عناب، یونجه و هندبید) با منشأ گیاهی متفاوت براساس خصوصیات رنگ، شوری، مقاومت الکتریکی و مواد جامد محلول تام (TDS) میباشد. برای تقسیمبندی عسلهای تکگل از روشهای کمومتریکس تحلیل مؤلفۀ اصلی (PCA)، آنالیز تشخیصی خطی (LDA) و آنالیز خوشهای (CA) استفاده گردید. نتایج نشان داد دو مؤلفۀ اصلی PC1 و PC2، 77.69 درصد از کل واریانس را شامل میشوند. همچنین در بررسی صورتگرفته با متد LDA نشان داد که این روش توانایی تقسیمبندی عسلهای مختلف با صحت 75 درصد را دارد. ازطرفدیگر متد CA در فاصلۀ اقلیدسی 85/58 عسلها در 7 گروه قرار گرفتند که عسلهای آویشن، زرشک، اقاقیا، عناب و گشنیز تقریباً در گروه مجزا بودند و عسلهای هندبید و یونجه در بین گروهها پراکنده بودند.

استفاده از روشهای تشخیص الگو در آنالیز دادههای حسگر بویایی جهت شناسایی تقلبات گلوکز و فروکتوز در عسل
رایحۀ عسل یکی از پارامترهای مهم در طبقهبندی عسل بهحساب میآید و بوی آن بسته به گلهای مختلف، موقعیت جغرافیایی و ترکیبات تشکیلدهندۀ عسل میتواند متفاوت باشد. هدف از این تحقیق توسعه و ارزیابی یک سامانۀ ماشین بویایی بهعنوان روشی نوین، مقرونبهصرفه، سریع و غیرمخرب جهت شناسایی تقلب در عسل بود. برای این منظور ارتباط بین گازهای سر فضای عسلهای با درصدهای مختلف تقلب (خالص، 20 درصد شربت، 40 درصد شربت، 60 درصد شربت و 80 درصد شربت) مورد ارزیابی قرار گرفت. ماشین بویایی ساختهشده شامل 8 عدد حسگر نیمههادی اکسید فلزی برای جمعآوری اطلاعات موجود در گازهای فضای فوقانی عسل بود. بعد از پیشپردازش دادههای بهدستآمده از ماشین بویایی مدلهای تشخیص الگو جهت شناسایی تقلب مورداستفاده قرار گرفتند. اجزای اصلی سامانۀ طراحیشده شامل سامانۀ تحصیل داده، الگوریتمهای تشخیص الگو و تحلیل داده میباشد. تحلیل مؤلفههای اصلی (PCA)، تجزیۀ خوشهای (HCA)، تحلیل (آنالیز) و تفکیککنندۀ خطی (LDA) روشهایی بودند که برای تحلیل دادههای بهدستآمده از ماشین بویایی، مورداستفاده قرار گرفتند. باتوجهبه نتایج بهدستآمده دقت تشخیص تقلب شامل 98/4 درصد واریانس به روش PCA، 99 درصد دقت طبقهبندی به روش HCA و 100 درصد قدرت طبقهبندی به روش LDA بود. نتایج نشان داد ماشین بویایی ساختهشده یک وسیلۀ کارآمد و قابلاطمینان در تشخیص تقلب عسل است.

تأثیر گیاه ترهکوهی بر رشد و ماندگاری باکتری پروبیوتیک لاکتوباسیلوس اسیدوفیلوس و ویژگیهای حسی پنیر سفید ایرانی
قابلیت زندهمانی باکتریهای پروبیوتیک در محصولات غذایی یکی از مهمترین چالشهای پیشرو میباشد. گیاه ترهکوهی از خانوادۀ آلیوم دارای ترکیبات مختلف پریبیوتیکی بوده که میتواند منجربه تحریک رشد باکتریهای پروبیوتیک شود. در این پژوهش ویژگی حسی پنیر سفید ایرانی بر پایۀ ترهکوهی بهعنوان یک گیاه دارویی و طعمدهنده موردارزیابی قرار گرفت. بدینمنظور پس از انجام آزمونهای شیمیایی روی شیر خام، تیمارهای مختلف شامل پنیر حاوی غلظتهای 1 و 2 درصد گیاه تازه و خشک و نیز نمونۀ کنترل بدون گیاه حاوی باکتری پروبیوتیک لاکتوباسیلوس اسیدوفیلوس تهیه شدند. نتایج نشان داد که باکتری پروبیوتیک لاکتوباسیلوس اسیدوفیلوس (PTCC 1643) در تیمارهای حاوی گیاه و کنترل بدون گیاه در طول زمان نگهداری (45 روز) روند کاهشی را داشته ولی در تیمارهای حاوی گیاه ترهکوهی این روند کاهشی کمتر بوده است. بهطوریکه در پایان روز 45ام کمترین میزان باکتری (لگاریتم CFU/g) در نمونۀ بدون گیاه (6/69) و بیشترین در نمونۀ حاوی 1 درصد گیاه خشک (8/12) بود. نتایج ارزیابی pH نیز نشان داد که در تمام نمونهها با طی زمان رسیدن پنیر روند کاهش pH بهطور طبیعی مشاهده گردید. ولی در تیمارهای حاوی گیاه در روزهای 30 و 45 اختلاف معنیداری با نمونۀ کنترل بدون گیاه دیده شد (P≤0.05). در ارزیابی حسی نیز نمونۀ حاوی گیاه 1 درصد تازه و باکتری پروبیوتیک بیشترین امتیاز را بین تیمارهای مختلف داشت (4/6) و مشخص نمود که افزودن ترهکوهی بهعنوان یک افزودنی گیاهی میتواند موجب بهبود خصوصیات حسی محصول شده و بهطور موفقیتآمیزی برای تولید پنیر سینبیوتیکی مورداستفاده قرارگیرد.

بهینهیابی شرایط هیدرولیز پروتئین دانۀ کدو با آنزیم آلکالاز بهمنظور دستیابی به حداکثر فعالیت ضداکسایشی و مهارکنندگی اکسید نیتریک
در این پژوهش، بهینهسازی شرایط هیدرولیز پروتئین دانۀ کدو (Cucurbita pepo) بهمنظور دستیابی به حداکثر خصوصیات مهارکنندگی رادیکال 2،2- دی فنیل -1-پیکریل هیدرازیل (DPPH) و مهارکنندگی اکسید نیتریک با استفاده از نرمافزار Design Expert و روش سطح پاسخ موردبررسی قرار گرفت. بهاینمنظور غلظت آنزیم آلکالاز 0/7-3/30 درصد، دمای 32-58 درجۀ سانتیگراد و زمان 30-290 دقیقه بهعنوان سطوح متغیرهای مستقل انتخاب شدند. نتایج نشان داد که شرایط بهینه برای دستیابی به حداکثر خاصیت مهارکنندگی رادیکال DPPH و مهارکنندگی اکسید نیتریک، دمای 44 درجۀ سانتیگراد، زمان 260 دقیقه و غلظت آنزیم به سوبسترا 3 درصد و با قابلیت ضداکسایشی و مهارکنندگی اکسید نیتریک برابر با 72/03 و 89/34 درصد بود که تا حدود زیادی مشابه با نتایج پیشنهادشده توسط نرمافزار (75/33 و 84/71 درصد) بود. طبق نتایج بهدستآمده پروتئین هیدرولیزشدۀ دانۀ کدو از قابلیت ضداکسایشی و مهارکنندگی اکسید نیتریک مناسبی برخوردار میباشد.
