بهینه‌سازی فرمولاسیون دسر هوادار حاوی کنسانترۀ پروتئین آب‌پنیر و صمغ زانتان با استفاده از روش سطح پاسخ و بررسی خواص رئولوژیکی و بافتی آن

چکیده

دسر هوادار نوعی دسر بر پایۀ سیستم کف است که حضور هوا در آن باعث تغییر خواص رئولوژیکی، حسی و ظاهری می‌شود. هدف از این تحقیق بهینه‌سازی دسر هوادار با استفاده از تکنیک سطح پاسخ و ارزیابی خواص رئولوژیکی آن به‌عنوان تابعی از کنسانترۀ پروتئین آب‌پنیر (2، 5 و 8 درصد)، صمغ زانتان (0/1، 0/25 و 0/4 درصد) و زمان هم‌زدن (2، 5 و 8 دقیقه) بود. نتایج نشان داد افزایش پروتئین و زمان هم‌زدن باعث کاهش دانسیته و افزایش اورران شد. افزایش غلظت صمغ زانتان باعث افزایش دانسیته و کاهش اورران گردید. شرایط بهینه جهت تولید کف دسر هوادار با کمترین میزان دانسیته و بالاترین میزان اورران در غلظت صمغ زانتان 0/1 درصد (سطح پایین)، مقدار کنسانترۀ پروتئین آب‌پنیر 8 درصد (سطح بالا) و زمان هم‌زدن 8 دقیقه (سطح بالا) تعیین شد. مدل پاورلا با داشتن R2 بالا (0/99<R2) و RMSE پایین (0/01) به‌عنوان بهترین مدل جهت توصیف رفتار جریان دسر هوادار شناخته شد. افزایش کنسانترۀ پروتئین آب‌پنیر و صمغ زانتان باعث کاهش شاخص رفتار جریان و افزایش ضریب قوام در دسر هوادار شد (0/05<P). همچنین با افزایش کنسانترۀ پروتئین آّب‌پنیر، صمغ زانتان و زمان هم‌زدن سختی، نیروی چسبندگی و ضریب قوام افزایش یافت. تولید دسر هوادار علاوه‌بر تولید یک محصول جدید، باعث افزایش قدرت انتخاب مصرف‌کننده‌ها و افزایش سودآوری تولیدکننده شده و می‎تواند کمک مؤثری در رشد اقتصاد صنعتی داشته باشد.
