ویژگی های کیفی نان فاقد گلوتن حاصل از واریته های برنج ایرانی

چکیده

بهبود نان برنج برای بیماران حساس به گلوتن گندم، نیازمند مطالعه ویژگی های فیزیکوشیمیایی برنج می باشد که منجر به بهبود خصوصیات نان حاصل خواهد شد. نمونه های نان برنج ایرانی پخته شده در دستگاه فر خانگی مورد ارزیابی فیزیکوشیمیایی قرار گرفتند و نان های حاصل از ارقام مختلف برنج ایرانی (طارم، شیرودی، ندا، فجر، قائم و بینام) با یکدیگر مقایسه شدند. به منظور بررسی کیفی، حجم مخصوص، آون اسپرینگ، نسبت ارتفاع به قطر، نسبت مغز به پوسته، تخلخل، محتوای رطوبتی و خواص بافتی مورد ارزیابی قرار گرفت. بررسی با میکروسکوپ الکترونی به منظور ارزیابی خواص بافتی انجام شد. با انتخاب مناسب ترین رقم امکان تولید نانی با خواص فیزیکی مطلوب فراهم خواهد شد. نتایج آزمایشات نشان داد که رقم برنج بینام خواص فیزیکی و کیفی مناسب برای تولید نان برنج فاقد گلوتن را دارد. رقم بینام بیشترین حجم مخصوص، بیشترین نسبت مغز به پوسته، کمترین سختی بافت و کمترین میزان رتروگراداسیون را بخود اختصاص داد.
