بررسی مشخصات و ساختار نانوسامانۀ سرم آلبومین گاوی-رسوراترول

چکیده

حل‌‎شوندگی کم رسوراترول در آب و حساس‌بودن این ترکیب به اکسیداسیون و ایزومریزاسیون، کاربرد آن را در فرمولاسیون مواد غذایی محدود می‌کند. در این مطالعه تأثیر برهمکنش آلبومین ـ رسوراترول بر اندازه و بار سامانه، حل‌شوندگی و خاصیت آنتی‌اکسیدانی رسوراترول مورد بررسی قرار گرفت. اندازه و بار ذرات با دستگاه پراکنش نور لیزر، مورفولوژی ذرات به کمک میکروسکوپ الکترونی، تأثیر تشکیل کمپلکس بر حل‌شوندگی رسوراترول در محیط آبی با روش‌های اسپکتروفتومتری معمولی و فلورسانس و خواص آنتی‌اکسیدانی با روش تعیین مقدار قدرت احیاکنندگی آهن 3 ظرفیتی اندازه‌گیری شد. نتایج حاکی از آن بود که رسوراترول به نسبت مولی 1 به 2/3 حل شده و محلول شفاف و کلوئیدی پایدار ایجاد می‌کند که متوسط اندازۀ ذرات آن حدود 30 نانومتر و عدم یکنواختی حدود 0/6 می‌باشد و بار الکتریکی آن 3±18- است. در تصویر میکروسکوپ الکترونی، اندازۀ ذرات کمپلکس آلبومین-رسوراترول بین 30 تا 50 نانومتر و به شکل کروی می‌باشد. نتایج آزمون احیاکنندگی آهن نشان داد که قدرت آنتی‌اکسیدانی رسوراترول در سرم آلبومین با نسبت مولی 60:60، حدود 58 درصد رسوراترول محلول دراتانول بود. بنابراین تشکیل کمپلکس مانع از اکسیداسیون رسوراترول می‌شود که قدمی ضروری در فرمولاسیون غذاهای فراسودمند است.
