بررسی اثر اضافه‌کردن اسانس پوست پرتقال بر ویژگی‌های شیمیایی، میکروبی و حسی لواشک آلو

چکیده

امروزه با افزایش آگاهی مصرف‌کنندگان از ایمنی و کیفیت مواد غذایی، تقاضا برای استفاده از مواد غذایی بدون نگهدارنده (مصنوعی) و حاوی افزودنی‌های طبیعی افزایش  یافته  است. گیاهان یکی از منابع اصلی ترکیبات ضدمیکروبی و حاوی اسانس‌های روغنی می‌باشند که دارای تأثیرات محافظت‌کنندگی در برابر میکروارگانیسم‌ها هستند. در این پژوهش اثر اضافه‌کردن اسانس پوست پرتقال بر ویژگی‌های شیمیایی، میکروبی و حسی لواشک آلو طی دورۀ 15 روزه موردبررسی قرار گرفت. نتایج نشان داد که افزودن اسانس پوست پرتقال به‌طور معنی‌داری (0/05>p ) باعث کاهش استحکام کششی و افزایش مقاومت به کشش لواشک آلو گردید. در انتهای دورۀ نگهداری 15 روزه لواشک آلو بالاترین مقدار pH و پایین‌ترین مقدار اسیدیته در نمونۀ حاوی 0/5 درصد اسانس پوست پرتقال مشاهده  گردید. در هیچ کدام از نمونه‌های لواشک آلو حاوی اسانس پوست پرتقال کپک و مخمر مشاهده  نگردید. نمونۀ حاوی 0/5 درصد اسانس پوست پرتقال دارای بالاترین میزان باکتری اسیدلاکتیک و نمونۀ حاوی 0/1 درصد اسانس پوست پرتقال کمترین میزان باکتری‌های اسیدلاکتیک را نشان  دادند. نتایج حاصل از این پژوهش نشان داد که نمونۀ لواشک حاوی 0/5 درصد اسانس پوست پرتقال کمترین و نمونۀ شاهد بیشترین باکتری‌های کلی را دارا بودند. نتایج تجزیۀ واریانس، اختلاف معنی‌داری را در خاکستر لواشک‌ها نشان  نداد. بیشترین امتیاز بافت، مزه و آروما مربوط به نمونۀ شاهد  بود. پذیرش کلی نمونۀ شاهد و نمونۀ پوست پرتقال 0/1 درصد طعم آلو بیشترین بود. به‌ترتیب در این دو نمونه طعم پرتقال بیشتر حس می‌شد. باتوجه‌به خاصیت ضدمیکروبی اسانس پوست پرتقال و تأثیرات مثبت آن در ویژگی‌های بافتی می‌توان از آن به‌عنوان یک نگهدارندۀ طبیعی در فراوردۀ لواشک آلو استفاده کرد.
