The moisture content, conjugated dienes (CD), thiobarbituric acid (TBA), color and texture properties of the samples were analyzed. The results showed that coating of shrimp by chitosan and its oligosaccharides, alone or in combination with SPP showed significant effects on the texture characteristics (springiness and chewiness) compared with the control and SPP-treated batches (p < /em><0.05). The CD and TBA indices showed an increasing trend during storage (p < /em><0.05). In the immersed treatments at CS 1% and in combination treatment with SPP, the TBA value was increased of 0.28 to 0.58 and 0.82 mg malondialdehyde/kg. This index was increased in the control and SPP (1 and 2%) to the 0.92 to 0.97 mg malondialdehyde/kg. According to the results, the treatments coated by chitosan and its oligosaccharide alone or in combination with sodium pyrophosphate had an effective role in inhibiting lipid oxidation and preventing its undesirable effects on frozen shrimp. In addition, color parameters (L*, a*, b*) in the treated samples by chitosan showed positive effects on stabilizing and improving the color of frozen shrimp during storage. Overall, the coating by chitosan and its oligosaccharides could maintain the quality of peeled frozen shrimp.}, keywords = {Chitooligosaccharide,Chitosan,oxidation,Shrimp,Texture}, title_fa = {تأثیر هیدروکلوئید کیتوزان و الیگوساکارید آن در مقایسه با پیروفسفات سدیم بر ویژگی‌های کیفی میگوی وانامی (Litopenaeus vannamei) در شرایط انجماد}, abstract_fa = {در این تحقیق، اثرات پوشش‌دهی کیتوزان و الیگوساکارید آن (1 و 2 درصد) روی برخی ویژگی‌های کیفی میگوی وانامی بدون پوست‌ طی 3 ماه نگهداری به‌صورت منجمد در مقایسه با پیروفسفات‌ سدیم (1 و 2 درصد)، تیمار ترکیبی پیروفسفات-‌کیتوزان (1 و 2 درصد) و پیروفسفات-الیگوساکارید ‌کیتوزان (1 و 2 درصد) موردمطالعه قرار گرفت. بررسی تیمارها با انجام آزمایش‌های تعیین مقدار رطوبت، تیوباربیتوریک ‌اسید، دی‌ان‌های مزدوج، سنجش رنگ و بافت انجام گرفت. نتایج نشان داد که پوشش‌دهی کیتوزان و الیگوساکارید آن به‌‌تنهایی یا در ترکیب با پیروفسفات‌ سدیم تأثیر معنی‌داری بر حفظ ویژگی‌های بافت (قابلیت جویدن و ارتجاعی) در مقایسه با تیمار شاهد و پیروفسفات ‌سدیم داشته است. مقادیر دی‌ان‌های مزدوج (CD) و تیوباربیتوریک اسید (TBA) طی نگهداری روند افزایشی داشت و در تیمارهای غوطه‌ورشده در کیتوزان 1 درصد و ترکیبی با پیروفسفات مقدار TBA از 0/28 به 0/58 و 0/82 میلی‌گرم مالون‌دی‌آلدهید افزایش یافت. این شاخص و در تیمار شاهد و پیروفسفات‌ سدیم (1 و2 درصد) به 0/92 تا 0/97 میلی‌گرم مالون‌دی‌آلدهید افزایش یافت. نتایج نشان داد که تیمارهای حاوی کیتوزان و الیگوساکارید آن به‌‌تنهایی یا در ترکیب با پیروفسفات‌ سدیم نقش مؤثری در به‌تعویق‌انداختن اکسیداسیون چربی و جلوگیری از اثرات نامطلوب آن در میگوی منجمد داشتند. به‌علاوه، شاخص‌های رنگ (*L*,a*,b) در نمونه‌های تیمارشده با کیتوزان اثرات مثبت بر تثبیت و بهبود رنگ میگو طی دورۀ نگهداری به‌صورت منجمد نشان دادند. به‌طورکلی، نتایج نشان داد به‌کارگیری کیتوزان و الیگوساکارید آن به‌عنوان محافظ سرمایی سبب حفظ کیفیت بافت میگوی پوست‌کنی‌شدۀ منجمد گردد.}, keywords_fa = {اکسیداسیون,الیگوساکارید کیتوزان,بافت‌,کیتوزان,میگو}, url = {https://journals.rifst.ac.ir/article_112898.html}, eprint = {https://journals.rifst.ac.ir/article_112898_5061ea09fbb9af1b9f2796a5a762bd92.pdf} }
