When the CaCO3 particles were dispersed in sunflower oil and then water in oil emulsion was prepared, with adding D-gluconic acid δ-lactone, water droplets containing alginate slowly gelate with outer layer of CaCO3 particles in micrometer hydrogels in the size of a few 10 µm without coagulation. CaCO3 microparticles act as both cross-linker for the alginate and stabilizer of water in oil emulsion. After leaving for 48 h, the hydrogel colloidosomes sank to the bottom of the container due to gravity. The results of infrared spectroscopy showed that indicative peaks of caffeine functional groups appeared in the loaded colloidosome sample spectrum and shifted its position. The results of calorimetric tests showed that the difference between the melting point of colloidosome samples with varying amounts of calcium carbonate microparticles in their formulas are linked. The results of the X-ray diffraction test showed a change in the crystalline degree of caffeine. After 5 h, the colloidosome sample, continued the caffeine release in water up to 55% maximally, while using mouth conditions for this sample, release of the loaded caffeine increased 33%. Generally, the results of instrumental analysis and release test showed that caffeine in the hydrogel colloidosome was well encapsulated within the alginate hydrogel network and have proper release under simulated oral condition.}, keywords = {Caffeine,colloidosome,Encapsulation,Hydrogel,release}, title_fa = {بررسی رهایش کافئین از کلوئیدوزوم هیدروژل در شرایط شبیه‌سازی‌شدۀ دهان و آنالیز دستگاهی میکروکپسول}, abstract_fa = {در این مطالعه به‌منظور ریزپوشانی کافئین به‌عنوان مدل ماده طعمی از کلوئیدوزوم هیدروژل با پوستۀ میکروذرات کربنات کلسیم استفاده شد. وقتی ذرات کربنات کلسیم در روغن آفتاب‌گردان پراکنده و سپس امولسیون آب در روغن تولید شد، با اضافه‌کردن گلوکونو دلتا-لاکتون، قطره‌های آب که محتوی آلژینات بودند با لایۀ خارجی ذرات کربنات کلسیم، به آهستگی درون هیدروژل‌هایی در اندازۀ چند 10 میکرومتر و بدون انعقاد ژلی شدند. میکروذرات کربنات کلسیم هم اتصال‌دهندۀ آلژینات و هم پایدارکنندۀ امولسیون آب در روغن هستند. بعد از 48 ساعت سکون، کلوئیدوزوم‌های هیدروژلی حاصل به‌دلیل نیروی ثقل در کف ظرف جدا شدند. نتایج آزمون طیف‌سنجی مادون‌قرمز نشان داد که پیک‌های شاخص گروه‌های عاملی کافئین در طیف نمونۀ کلوئیدوزوم بارگذاری‌شده ظاهر گردیده و موقعیت آن جابه‌جا شده است. نتایج آزمون حرارتی نشان داد که اختلاف نقطۀ ذوب بین نمونه‌های کلوئیدوزوم با مقادیر متفاوت میکروذرات کربنات کلسیم در فرمول آنها ارتباط دارد. نتایج آزمون پراش اشعۀ ایکس نیز مبین تغییر در درجۀ کریستالی کافئین بود. نمونۀ کلوئیدوزوم بعد از 5 ساعت، رهایش کافئین در آب را حداکثر تا 55 درصد ادامه داد. این در حالی است که با اعمال شرایط دهان در همان دما برای این نمونه، میزان رهایش کافئین بارگذاری‌شده 33 درصد افزایش نشان داد. به‌طورکلی، نتایج آنالیز دستگاهی و آزمون رهایش نشان داد که کافئین درون شبکۀ هیدروژلی آلژینات به‌خوبی ریزپوشانی‌شده است و رهایش مناسبی در شرایط شبیه‌سازی‌شدۀ دهان دارد.}, keywords_fa = {رهایش,ریزپوشانی,کافئین,کلوئیدوزوم,هیدروژل}, url = {https://journals.rifst.ac.ir/article_128725.html}, eprint = {https://journals.rifst.ac.ir/article_128725_0873087a5db6813975c64f230fac84c8.pdf} }
