The aim of this study was to stabilize phycocyanin and evaluate the method in pigment stability under different pH conditions. Phycocyanin (500 ppm) in solutions at three pH (3, 5, and 7) with different ratios (0, 75, 150, 225, and 300 ppm) of rosemarinic acid, tannic acid, digallic acid was mixed as a copolymer. These solutions were placed in cylindrical containers of the same size against a light source with an intensity of 7000 lux at ambient temperature. The color changes of the solutions were examined over 14 days. The structure of the microcapsules was examined using a scanning electron microscope. The average particle diameter size and zeta potential measurement of microcapsules were determined using a special particle measuring device. The results of pigment stability study showed that the use of tannic acid as a copigmenting compound has a higher resistance effect on phycocyanin and the concentration of 300 ppm has the highest resistance. The comparison of SEM showed that microcapsules containing maltodextrin were spherical with a smoother surface and had fewer wrinkles than those made with Arabic gum. The most stable pigment treatment is related to maltodextrin coating in the ratio of acid to pigment at pH=7 and the lowest pigment stability in the ratio of 0.4 times acid to pigment at pH=3. The particle size of microcapsules with different ratios in wall compositions varies between 159.2969 to 6006.637 nm. Also, the scattering index in the microcapsule varies between 0.299547 to 3.252826, which indicates the high dispersion of particles and the heterogeneity of particle size.}, keywords = {Copigmentation,Phycocyanin,Stability}, title_fa = {ارزیابی تأثیر نوع و سطوح مختلف ترکیبات کوپیگمنت‌کننده در پایداری رنگ‌دانۀ فیکوسیانین در برابر pH}, abstract_fa = {فیکوسیانین رنگ‌دانۀ استخراج‌شدۀ جلبک اسپیرولینا پلاتنسیس است و در صنایع مختلفی ازجمله صنایع غذایی می‌تواند جایگزین مناسبی برای رنگ‌های سنتزی باشد. هدف از این تحقیق تثبیت رنگ‌دانۀ فیکوسیانین و ارزیابی روش تثبیت در پایداری رنگ‌دانه در شرایط مختلف pH می‌باشد. فیکوسیانین (در غلظت 500 پی‌پی‌ام) در محلول‌های آبی در سه pH (3، 5 و 7) با نسبت‌های مختلف (0، 75، 150، 225 و 300 پی‌پی‌ام) از ترکیبات پلی‌فنولی رزمارینیک اسید، تانیک اسید، دیگالیک اسید به‌صورت کوپلیمر مخلوط شد. محلول‌های حاوی رنگ‌دانه در ظروف استوانه‌ای با ابعاد یکسان و در برابر منبع نوری با شدت 7000 لوکس در دمای محیط قرار داده شد. تغییرات رنگ محلول‌ها  طی بازۀ 14 روز بررسی شد. ساختار ریزکپسول‌ها با استفاده از میکروسکوپ الکترونی روبشی بررسی شد. اندازۀ متوسط قطر ذرات و اندازه‌گیری پتانسیل زتا ریزکپسول‌ها با استفاده از دستگاه مخصوص اندازه‌گیری ذرات تعیین شد. نتایج حاصل از بررسی پایداری رنگ‌دانه نشان داد که استفاده از ترکیب تانیک اسید به‌عنوان ترکیب کوپیگمنت‌کننده اثر مقاومت بیشتری در فیکوسیانین دارد و غلظت 300 پی‌پی‌ام بیشترین میزان مقاومت را ایجاد کرده است. مقایسۀ تصاویر میکروسکوپ الکترونی نشان داد که ریزکپسول‌های حاوی مالتودکسترین، کروی‌تر با سطح صاف‌تر و دارای چین‌وچروک‌های کمتری نسبت به ریزکپسول‌های تهیه‌شده با صمغ عربی بودند. پایدارترین تیمار رنگ‌دانه مربوط به پوشش مالتودکسترین در نسبت برابر اسید با رنگ‌دانه در 7=pH و کمترین پایداری در نسبت 0/4 برابر اسید با رنگ‌دانه در 3=pH می‌باشد. اندازۀ ذرات میکروکپسول‌ها با نسبت‌های متفاوت در ترکیبات دیواره بین 159/2996 تا 6006/637 نانومتر متغیر است. همچنین شاخص بس‌پاشیدگی در میکروکپسول بین 0/299547 تا 3/252826 متغیر است که نشان‌دهندۀ پراکندگی بالای‌ ذرات و ناهمگن‌بودن اندازۀ ذرات می‌باشد.}, keywords_fa = {پایداری,فیکوسیانین,کوپیگمنتاسیون}, url = {https://journals.rifst.ac.ir/article_141952.html}, eprint = {https://journals.rifst.ac.ir/article_141952_5c7e21cb94b04a7c404c2965c11cfcd8.pdf} }
