In this study, the physicochemical, quality, sensory, and microbial characteristics of yogurt containing sesame oil (1, 2, and 3%) after homogenization at two pressures of 100 and 200 bar, for 21 days storage was investigated. The samples with sesame oil had higher pH and this value increased with increasing homogenization pressure. During storage, acidity of all yogurt samples increased. Moreover, peroxide value of yogurt increased and this value was higher in sesame oil samples. Syneresis was higher in yogurts with sesame oil, but this value decreased with increasing oil especially in yogurt containing milk fat. Power law was fitted appropriately by experimental data of rheological properties. Sesame oil addition resulted in no significant effect in hardness value of samples in comparison with milk fat. The lightness of yogurts showed that only the sample contained 3% sesame oil and treated at 100 bar pressures had significant difference with other samples (P<0.05). Microbial characteristics of samples were in accordance with institute of standards of Iran. Although, sensory evaluation of samples showed that yogurt containing sesame oil had better texture than yogurt containing milk fat; however, taste and mouthfeel of them showed lower scores. Sesame oil addition caused reducing overall acceptability of yogurts that may be related to the applying of oil without deodorization.}, keywords = {Functional,Quality,Sesame oil,Texture,yogurt}, title_fa = {اثر روغن‌کنجد و فشار هموژنیزاسیون بر ویژگی‌های فیزیکوشیمیایی، کیفی و میکروبی ماست}, abstract_fa = {ماست یکی از پرمصرف‌ترین فراورده‌های لبنی است که به‌دلیل ارزش غذایی بالا و اثر سلامتی‌بخشی آن، اهمیت ویژه‌ای در برنامۀ غذایی افراد دارد. در این تحقیق، خصوصیات فیزیکوشیمیایی، کیفی، حسی (بافت، طعم و مزه، احساس دهانی و پذیرش کلی) و میکروبی نمونه‌های ماست تولیدی حاوی روغن‌کنجد (1، 2 و 3 درصد) بعد از هموژنیزاسیون در دو فشار 100 و 200 بار، طی دورۀ نگهداری 21 روز مطالعه شدند. نمونه‌های دارای روغن‌کنجد pH بالاتری دارند و با افزایش فشار، میزان pH افزایش نشان داد. طی دورۀ نگهداری، میزان اسیدیتۀ نمونه‌ها، روند افزایشی داشت. به‌علاوه، اندیس پراکسید افزایش یافت و میزان آن در نمونه‌های حاوی روغن‌کنجد بیشتر بود. آب‌اندازی در نمونه‌های دارای چربی شیر در مقایسه با روغن‌کنجد بیشتر بود؛ اما میزان آب‌اندازی با افزایش میزان چربی بخصوص درمورد چربی شیر، کاهش یافت. قانون توان به‌خوبی با نتایج خصوصیات رئولوژیکی نمونه‌های ماست برازش شد و افزودن روغن‌کنجد منجربه تفاوت قابل‌ملاحظه در خصوصیات بافتی نمونه‌ها نشد. پارامتر روشنایی نشان داد که تنها نمونۀ حاوی 3 درصد روغن‌کنجد و هموژن‌شده در فشار 100 بار، اختلاف معنی‌داری با سایر نمونه‌ها دارد (0/05>P). باوجوداینکه ارزیابی حسی نمونه‌های تولیدی نشان داد که ماست‌های حاوی روغن‌کنجد، با افزایش میزان روغن بافت بهتری را داشتند؛ اما طعم و مزه و احساس دهانی پایین‌تری را نشان دادند. افزودن روغن‌کنجد باعث اُفت پذیرش کلی ماست تولیدی شد که ممکن است ناشی از عدم بوگیری روغن‌کنجد مصرفی در محصول باشد.}, keywords_fa = {بافت,روغن‌کنجد,عمل‌گرا,کیفی,ماست}, url = {https://journals.rifst.ac.ir/article_141992.html}, eprint = {https://journals.rifst.ac.ir/article_141992_0a9e306dea19cb6c2ebc6a882a40027c.pdf} }
