The most effective way to solve this problem is to use the principles of dimensional analysis to determine the relationships governing the phenomenon. Using dimensional analysis, one can obtain the numbers and non-dimensional parameters that are involved in determining the equations governing a phenomenon. In this study, for the first time, the method of dimensional analysis was used to obtain the non-dimensional numbers governing the hydrostatic high-pressure process, because there are many variables involved in this process, and the best way to find the relationship between them is to use a dimensional analysis tool. In the next step, after identifying the influential variables using Buckingham's theory, the dimensionless numbers governing the high-pressure process are obtained. Then the measured quantities from the high-pressure tests, the frequency response and the stress-strain rate are given in the form of dimensionless numbers, pre-arranged in order, and the test substance behaviour (the millet starch) is examined. As a result, in addition to the relationship between variables and their relative importance, some material behavioural properties are also represented in the form of dimensionless graphs that differ in behaviour from conventional graphs. In the high-pressure test, the test material was subjected to a hydrostatic pressure of 200 to 600 MPa for 10 to 30 min. The results obtained from the high-pressure test showed that the rheological properties of millet starch, including the complex viscosity, can change with increasing pressure and time of application.}, keywords = {Buckingham,Dimensional Analysis,High hydrostatic pressure,Millet,Starch}, title_fa = {تحلیل ابعادی و تجربی فرایند فشار هیدرواستاتیک بالا؛ مطالعۀ موردی: به‌کارگیری اعداد بی‌بُعد در آزمون رئولوژیکی نشاستۀ ارزن}, abstract_fa = {اغلب روابط حاکم بر بسیاری از پدیده‌های فیزیکی را نمی‌توان به شکل صریح از اصول بقاء و معادله‌هایی نظیر پیوستگی، برنولی، مومنتوم یا در حالت کلی معادلۀ ناویرـاستوکس به‌دست‌آورد. برای رفع این مشکل مؤثرترین روش استفاده از اصول تحلیل ابعادی در تعیین روابط حاکم بر پدیده است. با استفاده از تحلیل ابعادی می‌توان به اعداد و پارامترهای بدون بُعد دست‌یافت که در تعیین معادله‌های حاکم بر یک پدیده نقش دارند در این تحقیق برای اولین‌بار از روش تحلیل ابعادی برای به‌دست‌آوردن اعداد بی‌بُعد حاکم بر فرایند فشار بالای هیدرواستاتیک استفاده شده است، چراکه متغیرهای دخیل در این فرایند زیاد بوده و بهترین روش برای پیداکردن ارتباط بین آنها، استفاده از ابزار آنالیز ابعادی می‌باشد. در گام بعدی و پس از شناسایی متغیرهای مؤثر با استفاده از تئوری باکینگهام اعداد بی‌بُعد حاکم بر فرایند فشار بالا به‌دست‌آمده است. پس از آن کمیات اندازه‌گیری‌شده حاصل از آزمون‌های فشار بالا، روبش فرکانس و نرخ کرنش برشی در قالب اعداد بی‌بُعد که از قبل به‌دست‌آمده دسته‌بندی و به بررسی رفتار مادۀ موردآزمایش (نشاستۀ ارزن) پرداخته شده است. درنتیجه با استفاده از اعداد بی‌بُعد به‌دست‌آمده علاوه‌بر اینکه ارتباط بین متغیرها و درجۀ اهمیت آنها نسبت به یکدیگر مشخص گردید، برخی از ویژگی‌های رفتاری مواد نیز در قالب نمودارهای بی‌بُعد نمایش داده شده است که با نمودارهای متداول تفاوت رفتاری دارد. دراین‌خصوص نمونۀ تحت فشار هیدرواستاتیکی 200 تا 600 مگاپاسکال برای 10تا30 دقیقه قرار گرفت. نتایج نشان داد که ویژگی‌های رئولوژیکی نشاستۀ ارزن ازجمله ویسکوزیتۀ کمپلکس با افزایش فشار و زمان اعمال آن تغییر قابل‌توجهی دارند.}, keywords_fa = {Buckingham,Dimensional Analysis,High hydrostatic pressure,Millet,Starch}, url = {https://journals.rifst.ac.ir/article_150306.html}, eprint = {https://journals.rifst.ac.ir/article_150306_b39da2526c5001f07a8b281b855b7d25.pdf} }
