Perennial plant of chicory (Cichorium intybus) is the commercial source of inulin production in Europe and Australia, while this plant is growing wildly in Iran as an annual crop and little studies has been done on its quality enhancement and properties. The aim of this project was to compare the inulin extracted from Iranian volunteer annual chicory with commercial inulin and that of some other plants including Jerusalem artichoke and perennial chicory which was originally from Hungary but cultivated in Iran. Inulin was extracted using hydrothermal extraction process followed by clarification and concentration. The concentrate was fractionated using ethanol precipitation. Physico-chemical analysis was carried out to determine its characterizations and polymerization degree. The most yield of inulin extraction was acquired from Jerusalem artichoke with 81.77% then perennial chicory with 79.02% and maximum polymerization was belonged to the perennial chicory with 41.9%. Results showed the superiority of inulin extracted from perennial chicory compared to our native plants in quality and revealed the necessity of more researches on plant localization in order to commercialize production of this prebiotic product.}, keywords = {Cichorium intybus,Inulin,Jerusalem artichoke,Prebiotics}, title_fa = {ارزیابی و مقایسه کیفی اینولین استخراجی از کاسنی بومی ایران با اینولین حاصل از سایر منابع}, abstract_fa = {ترکیب پری بیوتیکی اینولین به دلیل ویژگی های عملگرا و خصوصیات سلامت­زای خود به طور روز افزونی مورد توجه پژوهشگران و متخصصین صنایع غذایی قرار گرفته است. گیاه کاسنی چند ساله منبع عمده تولید تجاری این محصول در کشورهای اروپایی و استرالیا است، حال آنکه در ایران این گیاه عمدتاً به صورت یکساله و خود رو رویش یافته و در خصوص ارزیابی و افزایش کیفیت آن فعالیت چندانی صورت نگرفته است. این پژوهش با هدف استخراج اینولین از گیاه کاسنی یک ساله بومی و کاسنی با منشأ خارجی، و مقایسه ی اینولین استخراجی با نمونه اینولین تجاری و اینولین حاصل از غده ی سیب زمینی ترشی صورت گرفت. اینولین طبیعی موجود در ریشه کاسنی و غده ی سیب زمینی ترشی استخراج شد. آزمون های فیزیکوشیمیایی به منظور تعیین ویژگی های کمی و کیفی اینولین صورت گرفته و درجه پلیمریزاسیون نمونه ها تعیین گردید. بیشترین درصد اینولین استخراجی مربوط به سیب زمینی ترشی با 81/77% و سپس کاسنی دو ساله با 79/02% بود. اینولین استخراجی از کاسنی دو ساله در مقایسه با سایر نمونه های اینولین از درجه پلیمریزاسیون بالاتری (41/9) برخوردار بود. این تحقیق نشان دادکه اینولین استخراج شده از کاسنی دو ساله با منشأ خارجی نسبت به کاسنی بومی از ویژگی های کیفی برتری برخوردار است. تحقیق در خصوص بومی سازی واریته های چند ساله جهت تجاری سازی تولید این محصول ضروری می نماید.}, keywords_fa = {اینولین,پری بیوتیک,سیب زمینی ترشی,کاسنی}, url = {https://journals.rifst.ac.ir/article_66549.html}, eprint = {https://journals.rifst.ac.ir/article_66549_ba118a1709b2193bb8b215ee8ec53ee9.pdf} }
