Since biscuit is one of the most consumed floury products specially for children, the objective of this research is to assay the effect of the replacement of whey protein powder with dried milk in the 3 levels (25, 75 and 100 %), and the effect of the replacement of ammonium hydrogen carbonate and baking powder with sodium hydrogen carbonate on acrylamide, reducing sugar, protein, moisture, pH and acidity content on Petit Beurre and Madar biscuits were investigated. By increasing  whey protein powder replacement in both kinds of biscuits, pH, only in samples which were completely produced by dried milk powder and whey protein powder, was considerable. In this phase protein content had decreasing, while acidity and reducing sugar had increasing procedure. The content of acrylamide in Madar and Petit Beurre biscuit samples produced by 100 % whey protein powder, in comparison with control, decreased 11.9 % and 4.1 % respectively, which may be related to the decrease of protein content in formulation. The content of pH and acidity respectively decreased and increased by replacing sodium hydrogen carbonate with baking powder. By using sodium hydrogen carbonate in both biscuit samples the content of reducing sugar considerably decreased. The minimum and maximum amount of acrylamide was observed in the samples containing sodium hydrogen carbonate and ammonium hydrogen carbonate, respectively.}, keywords = {Acrylamide,Ammonium hydrogen carbonate,Biscuit,Dried milk}, title_fa = {اثر پودر آب‌پنیر و بی‌کربنات سدیم بر مقدار آکریل‌آمید در بیسکویت‌های پتی‌بور و مادر}, abstract_fa = {آکریل­آمید ترکیبی سرطان­زاست که مواد غذایی غنی از کربوهیدرات مانند بیسکویت مستعد تشکیل آن می­باشند. از آنجایی که بیسکویت یکی از پرمصرف­ترین فرآورده­های آردی به عنوان میان­وعده به­ویژه در بین کودکان است؛ در پژوهش حاضر اثر جایگزینی شیرخشک با پودر آب پنیر در سه سطح (25، 75 و 100 درصد) و اثر جایگزینی بی­کربنات سدیم با بی­کربنات آمونیوم و بکینگ­پودر بر میزان آکریل­آمید، قند احیاء، پروتئین، رطوبت، pH و اسید قابل تیتر در دو نوع بیسکویت پتی­بور و مادر بررسی شد. با افزایش درصد جایگزینی پودر آب پنیر در دو نوع بیسکویت پتی­بور و مادر،pH  تنها در نمونه­های بیسکویت تهیه شده از شیرخشک کامل و پودر آب پنیر کامل با یکدیگر تفاوت معنی­دار نشان داد. همچنین میزان پروتئین روند کاهشی و اسید قابل تیتر و قند احیاء روند افزایشی نشان دادند. میزان آکریل­آمید در سطح جایگزینی 100 درصد پودر آب پنیر نسبت به نمونه شاهد در بیسکویت مادر و پتی­بور به ترتیب 11/9 و 4/1 درصد کاهش یافت. با جایگزینی بی­کربنات سدیم با بکینگ­پودر در فرمول نمونه­های بیسکویت، pH کاهش و اسید قابل تیتر افزایش یافت. در صورت استفاده از بی­کربنات سدیم در فرمول بیسکویت­های پتی­بور و مادر، محتوی قند احیاء به­طور معنی­داری کمتر بود. کمترین و بیشترین میزان آکریل­آمید به ترتیب در نمونه­های بیسکویت حاوی بی­کربنات سدیم و بی­کربنات آمونیوم مشاهده شد.}, keywords_fa = {آکریل‌آمید,بیسکویت,بی‌کربنات آمونیوم,شیرخشک}, url = {https://journals.rifst.ac.ir/article_66590.html}, eprint = {https://journals.rifst.ac.ir/article_66590_894484ca14d917dab3f8856712a44d3a.pdf} }
