This method is widely used in simultaneous blanching and drying process. The main advantages of intermittent IR-radiation are energy saving and preventing undesirable quality changes in the final product. The calculations of mass transfer in this process can be used to estimate the temperature and time conditions in the process. For this purpose, drying behavior of apples slices (Golden Delicious variety) was investigated with slab shape in three different sizes: thickness of 5, 9 and 13 mm and length and width was 20 mm. Heating operation performed by infrared dryer that was equipped with controller of product surface temperatures at 70, 75 and 80 °C. Kinetic models such as Newton, Page, Modified Page, Henderson-Pabis and parabolic were fitted on experimental data of dimensionless moisture ratio using MATLAB software. The adjusted correlation coefficient (Adj.R2) and root mean square error (RMSE) were used to compare the models. The evaluation of effective moisture diffusivity (Deff) performed during drying of slices and its dependency with temperature investigated using Arrhenius equation. The results showed that models of page and parabolic presented a good fit on experimental data, respectively (higher Adj.R2 and lower RMSE). The effective diffusion coefficient significantly elevated with an increase in surface temperature and thickness. This parameter showed higher energy activation for lower thicknesses that indicated a greater irradiation temperature dependence of effective diffusion coefficient through the decreasing of thickness.}, keywords = {Drying,Infrared,Intermittent Heating,Kinetic Model,Mass Transfer}, title_fa = {مدل‌سازی انتقال جرم در فرایند خشک‌کردن برش‌های سیب توسط پرتودهی مادون‌قرمز با روش حرارت‌دهی متناوب}, abstract_fa = {پرتودهی مادون‌قرمز با حرارت‌دهی متناوب، روشی نوین است که طی آن دمای سطحی محصول جهت انجام هم‌زمان بلانچینگ و خشک‌کردن، ثابت نگه داشته می‌شود. مزیت کلی پرتودهی متناوب ذخیرۀ انرژی و جلوگیری از تغییرات کیفی نامطلوب در محصول نهایی است. از محاسبه‌های انتقال جرم برای تخمین شرایط دمایی و زمان در این فرایند می‌توان استفاده کرد. در این پژوهش، رفتار خشک‌شدن برش‌های سیب (واریتۀ زرد لبنانی) به شکل تیغه در 3 اندازه با ضخامت 5، 9 و 13 میلی‌متر و با طول و عرض 20 میلی‌متر بررسی شد. عملیات حرارتی در یک خشک‌کن مادون‌قرمز مجهز به کنترل‌کنندۀ دمای سطحی محصول و در 3 دمای 70، 75 و 80 درجۀ سانتی‌گراد انجام شد. مدل‌های سینتیکی به‌صورت مدل‌های نیوتن، پیج، اصلاح‌شدۀ پیج، هندرسون-پابیس و پارابولیک در نرم‌افزار متلب روی داده‌های تجربی نسبت رطوبتی بدون بُعد برازش گردید. مقایسۀ مدل‌ها توسط ضریب همبستگی تصحیح‌شده (Adj.R2) و ریشۀ میانگین مربعات خطا (RMSE) انجام شد. محاسبۀ ضریب نفوذ مؤثر رطوبت (Deff) طی خشک‌شدن برش‌ها انجام گرفت و ارتباط آن با دمای فرایند نیز ازطریق رابطۀ آرنیوس بررسی شد. نتایج نشان داد، مدل پیج و مدل پارابولیک برازش مطلوبی روی داده‌های آزمایشی نشان دادند (Adj.R2 بیشتر و RMSE کمتر). ضریب نفوذ مؤثر با افزایش دمای سطحی و ضخامت محصول به‌طور معنی‌داری همواره بالاتر بود. این پارامتر در ضخامت‌های کمتر انرژی فعال‌سازی بالاتری داشت که این امر نشان‌دهندۀ وابستگی بیشتر ضریب نفوذ مؤثر به دمای پرتودهی با کاهش ضخامت است.}, keywords_fa = {انتقال جرم,حرارت‌دهی متناوب,خشک‌کردن,مادون‌‌‌قرمز,مدل سینتیکی}, url = {https://journals.rifst.ac.ir/article_67061.html}, eprint = {https://journals.rifst.ac.ir/article_67061_3572ccfbeb022208b0536a32e194ff73.pdf} }
