As of current, the only known treatment for this disease is to get a gluten-free diet. In this study, sorghum flour (extruded and non-extruded), xanthan and Lepidium perfoliatum seed gum were applied at three concentrations, namely 0, 0.3, 0.6 and 1.0%, to improve physical and chemical characteristics of gluten-free cookies. The cookies were subjected to physical and chemical characterization (spread factor, textural properties, gelatinization temperature, enthalpy, color, percent porosity, and crust thickness) and sensory evaluations. The results showed that, the cookies made from extruded sorghum flour (100%) containing Lepidium perfoliatum seed gum at 0.3% had the lowest L* and the highest a* and b* contents. Moreover, the samples composed of non-extruded sorghum flour had the highest adhesiveness and stiffness, while post-baking stiffness of the cookies composed of extruded sorghum flour was lower than those of other cookies; i.e. the cookies made from extruded sorghum flour were of softer texture. These cookies had also the highest spread factor, percent porosity, and crust thickness, and these properties were observed to increase with increasing the gum concentration. Overall acceptability of the cookies made from extruded sorghum flour was significantly higher than those composed of non-extruded sorghum flour, indicating extruded sorghum flour as an appropriate ingredient for producing gluten-free cookies.}, keywords = {Celiac,Cookie,Extruded Sorghum,Lepidium Perfoliatum,Xanthan}, title_fa = {بررسی تأثیر آرد سورگوم اکسترودشده و هیدروکلوئیدها بر ویژگی‏های فیزیکی و شیمیایی کوکی فاقد گلوتن}, abstract_fa = {بیماری سلیاک یک بیماری خودایمن گوارشی است که در اثر هضم پروتئین گلوتن ایجاد می‏شود و تنها راه درمان آن استفاده از یک رژیم غذایی فاقد گلوتن است. ازاین‌رو هدف از انجام این پژوهش بررسی امکان استفاده از آرد سورگوم (اکسترودشده و نشده) و صمغ‌های زانتان و قدومۀ شهری با غلظت‌های صفر، 0/3، 0/6 و 1/0 درصد به‌منظور بهبود ویژگی‌های فیزیکی و شیمیایی کوکی فاقد گلوتن بود. ویژگی‌های محصول نهایی مانند نسبت گسترش‌پذیری، خصوصیات بافتی، دمای ژلاتیناسیون و آنتالپی کل، رنگ، درصد تخخل، ضخامت پوسته و ارزیابی حسی در قالب یک طرح فاکتوریل کاملاً تصادفی مورد بررسی قرار گرفتند. نتایج نشان دادند که کوکی حاوی آرد سورگوم اکسترودشده و 0/3 درصد صمغ قدومۀ شهری کمترین میزان L* را دارا بود. نمونه‏های حاوی آرد سورگوم اکسترودنشده بالاترین میزان چسبندگی و سفتی بافت خمیر را داشت و میزان سفتی بافت کوکی‏ها بعد از پخت در نمونه‏های حاوی آرد سورگوم اکسترودشده از سایر نمونه‏ها کمتر بود و کوکی به‌دست‌آمده از آن بافت نرم‏تری داشت. همچنین کوکی‏های حاوی آرد سورگوم اکسترودشده و صمغ قدومۀ شهری بالاترین میزان نسبت گسترش‌پذیری، درصد تخلخل و ضخامت پوسته را دارا بودند و با افزایش غلظت صمغ‏ها این ویژگی‌ها بهبود یافتند. پذیرش ‏کلی کوکی‏های حاوی آرد سورگوم اکسترودشده به‏طور معنی‌داری از کوکی‌های حاوی آرد سورگوم اکسترودنشده بیشتر بود (0/05≥P). بنابراین آرد سورگوم اکسترودشده می‌تواند ترکیب مناسبی برای تولید کوکی فاقد گلوتن باشد.}, keywords_fa = {زانتان,سلیاک,سورگوم اکسترود,قدومۀ شهری,کوکی}, url = {https://journals.rifst.ac.ir/article_67117.html}, eprint = {https://journals.rifst.ac.ir/article_67117_84c5b696bb28be3f8b65f6bbd84b9fd3.pdf} }
