Vanillin release was studied using a mouth simulator. The parameters included oral variable such as saliva and the tension on vanillin release. To examine the release of vanillin, the release of these microcapsules (one and two-layers) at 37 °C and pH=6.8, as well as frequent chewing (0, 30 and 55 rpm) were investigated. The results of the release of single (isolated soy protein) and twolayers (modified starch) microcapsules according to the Korsemeyer- Peppas equation showed that the two-layer microcapsules were less diffusion coefficient than the one-layer microcapsules. Mean dissolution time for two-layer and one-layer were calculated 1.24 and 1.08 h at 37 °C, respectively.Therefore, at the same conditions (adding saliva and shear stress), the release rate of vanillin from the two-layer microcapsules was lower than the one-layer microcapsules due to the modified starch coating around the shells and the increase in the thickness of the shell of the two-layered microcapsule, which reduces the release velocity of vanillin from the two-layer microcapsules.}, keywords = {Modeling,Mouth Simulator,release,Vanillin}, title_fa = {ارزیابی رهایش وانیلین از ریزکپسول‌های چندلایه تحت ‌شرایط شبیه‌سازی‌شدۀ دهان}, abstract_fa = {در این پژوهش، رهایش وانیلین از ریزکپسول‌های چندلایه تشکیل‌شده از ایزولۀ پروتئین سویا، نشاستۀ اصلاح‌شده و کیتوزان که توسط خشک‌کن پاششی تولیدشده بودند تحت ‌شرایط مختلف بررسی گردید. ارزیابی رهایش با استفاده از یک شبیه‌ساز دهان بررسی شد. پارامترهای موردنظر شامل متغیرهای دهانی نظیر بزاق و دامنۀ تنش واردشده بر میزان رهایش وانیلین بود. برای بررسی نحوۀ رهایش وانیلین ریزکپسوله‌شده، رهایش این ریزکپسول‌ها (یک و دولایه) در دمای 37 درجۀ سانتی‌گراد و 6/8=pH و نیز تعداد دفعات جویدن (0، 30 و 55 دور در دقیقه) مورد بررسی قرار گرفت. همچنین خصوصیات فیزیکوشیمیایی ریزکپسول‌ها مطالعه شد. نتایج بررسی رهایش ریزکپسول‌های یک‌لایه (ایزولۀ پروتئین سویا) و دولایه (نشاستۀ اصلاح‌شده) براساس معادلۀ کورسمیر-پپاس حاکی از این بود که ریزکپسول‌های دولایه نسبت به ریزکپسول‌های یک‌لایه دارای ضریب نفوذ کمتری بودند که مقدار شاخص متوسط زمان انحلال (MDT) برای کپسول دولایه و یک‌لایه به‌‌ترتیب معادل 1/24 و 1/08 ساعت در دمای 37 درجۀ سانتی‌گراد محاسبه گردید، سپس در شرایط یکسان (افزودن بزاق و تنش برشی)، سرعت رهایش وانیلین از ریزکپسول‌های دولایه کمتر از ریزکپسول‌های یک‌لایه می‌باشد که این امر به‌دلیل پوشش نشاستۀ اصلاح‌شدۀ اطراف پوسته‌ها و افزایش ضخامت پوستۀ ریزکپسول دولایه می‌باشد که باعث کاهش سرعت انتشار وانیلین از ریزکپسول‌های دولایه می‌شود.}, keywords_fa = {دهان مصنوعی,رهایش,مدل‌سازی,وانیلین}, url = {https://journals.rifst.ac.ir/article_90973.html}, eprint = {https://journals.rifst.ac.ir/article_90973_b522814c7e6498a244d2b88576767d16.pdf} }
