شناسایی ترکیبات شیمیایی تقطیرات حاصل از مرحلۀ بوگیری روغن خام سویا با استفاده از دستگاه کروماتوگراف گازی-طیفسنج جرمی (GC-MS)
تقطیرات مرحلۀ بوگیری، محصول فرعی و یکی از ضایعات مهم صنایع روغنهای خوراکی میباشد که دارای ماهیت پیچیدهای بوده و منبعی باارزش اقتصادی بالا از ترکیبات زیستفعال و مغذی شامل فیتواسترولها، توکوفرولها و اسکوآلن میباشد. در این مطالعه، بهجای استفاده از پیشتیمار مشتقسازی و صابونیکردن نمونه (با استفاده از حلالهای سمی و کار آزمایشگاهی طولانی) که در مطالعههای پژوهشی پیشین بهصورت متداول استفاده شده است، از روش تیمار فراصوت و پس از آن سانتریفیوژکردن و جمعآوری مایع رویی جهت تزریق مستقیم به دستگاه کروماتوگراف گازی-طیفسنج جرمی (GC-MS) استفاده شد. بهینهسازی برنامۀ دمایی بهمنظور جداسازی اجزاء مختلف تقطیرات شامل توکوفرول، استرول و اسکوآلن انجام شد. براساس نتایج بهدستآمده فراوانترین ترکیبات در تقطیرات روغن سویا، فیتواسترولها بودند (24/3-22/5 درصد)، این در حالی است که غلظت اسکوآلن و توکوفرول بهترتیب 6-5/9 و 11/24-10 درصد بود. مقدار اسیدهای چرب آزاد تقطیرات روغن سویا بالا و به میزان 62/46 درصد اندازهگیری شد. همچنین تریگلیسریدها اصلیترین گلیسریدهای تقطیرات بودند (1/4 درصد). مطالعۀ حاضر نشان داد که بخش غیرقابلصابونیشوندۀ تقطیرات بوگیری بهدلیل داشتن مقادیر قابلتوجه ترکیبات زیستفعال، میتواند پس از تخلیص در صنایع مختلف غذایی، دارویی، آرایشی و بهداشتی مورداستفاده قرار گیرد.

بررسی اثر پوششدهی با صمغهای کتیرا و ثعلب و تیمار اسمزی بر خصوصیات فیزیکوشیمیایی گوشت شترمرغ
در این پژوهش تأثیر غلظت کلرید سدیم و مدت زمان تیمار اسمزی بر خصوصیات فیزیکوشیمیایی قطعههای گوشت با تیمار پوششدهی کتیرا و ثعلب بررسی شد. با هدف افزایش انتقال رطوبت و کاهش جذب مواد جامد، تیمار اسمزی قطعههای گوشت شترمرغ (20×30×30 میلیمتر) با غلظتهای 5، 15 و 27 درصد طی 24 ساعت با تیمارهای پوششدهی کتیرا در سطوح 0/25، 0/5 و 1 درصد و ثعلب در سطوح 1، 2 و 3 درصد انجام شد. اُفت یا جذب رطوبت و جذب مواد جامد بهطور چشمگیری تحتتأثیر غلظت محلول اسمزی و غلظت پوشش طی تیمار اسمزی بود (0/05>p ). در غلظت 5 و 27 درصد بهترتیب، مقدار جذب رطوبت و اُفت رطوبت در نمونههای تیمارشده نسبت به نمونۀ کنترل بیشتر بود (0/05>p )، که ممکن است بهدلیل ساختار آبدوست کتیرا یا ثعلب و بازدارندگی کم آنها در برابر انتقال رطوبت است. تیمار ثعلب 2 درصد با ممانعت از ورود بیشازحد مواد حلشونده، بهترین نمونه با جذب مواد جامد کمتر بود. تیمار پوششدهی بر محتوای رطوبت، ظرفیت نگهداری آب، فعالیت آبی و شاخص کارایی قطعههای گوشت طی فرایند اسمزی نیز تأثیر چشمگیری داشت (0/05>p ). شاخص کارایی نمونههای گوشت پوششدادهشده در بیشتر تیمارها در غلظت 5 و 15 درصد و در تمامی تیمارها در غلظت 27 درصد از نمونۀ کنترل بیشتر بود. تیمار ثعلب 2 درصد در پایان اسمز بیشترین شاخص کارایی را داشت. به عبارتی تیمار پوششدهی میتواند جذب مواد جامد را طی تیمار اسمزی کنترل کند، درحالیکه انتقال رطوبت را نیز تسهیل میکند

بهینهسازی فرمولاسیون شکلات شیری غنیشده با روغن دانۀ چیا، ویتامین D3 و کلسیم به روش سطح پاسخ
در این پژوهش بهینهیابی فرمولاسیون شکلات غنیشده با روغن چیا بهعنوان منبع امگا-3، ویتامین D3 و کلسیم به روش سطح پاسخ مطالعه گردید. برایناساس مقادیر متفاوت کلسیم (60، 95 و 130 میلیگرم)، ویتامین D3 (0/75 ،0/5 و 1 میکروگرم) و روغن چیا (1، 3 و 5 میلیگرم) در 20 فرمولاسیون به شکلات افزوده شدند و سپس ویژگیهای حسی شکلاتهای غنیشده توسط ارزیابان سنجیده شدند. براساس آنالیز سطح پاسخ، 24 نمونۀ بهینه پیشنهاد شد که در تمام آنها مقدار روغن چیا در حد کمینۀ دامنه (1 میلیگرم) و کلسیم در حد بیشینۀ آن (130 میلیگرم) قرار داشت. لذا از میان آنها سه فرمول با مقادیر متفاوت ویتامین D3 (0/5 ،0/75 و 1 میکروگرم) انتخاب شدند و آزمونهای ارزیابی حسی، بافتسنجی، رنگسنجی، رفتار گرمایی، تعیین رطوبت، فعالیت آبی و عدد پراکسید روی این نمونهها در ابتدای تولید و پس از 3 ماه نگهداری انجام شدند. ارزیابیهای حسی نشان داد که شاخصهای طعم، بافت و پذیرش کلی شکلاتهای غنیشده نسبت به شاهد کاهش معنیدار داشتند (0/05>p ). شاخص سفیدی و فعالیت آبی بهترتیب نسبت به نمونۀ شاهد افزایش و کاهش معنیدار نشان دادند؛ درحالیکه سفتی و عدد پراکسید تیمارها نسبت به شاهد تغییرات معنیداری نداشتند. دمای شروع ذوب شکلات غنیسازیشده نسبت به شاهد کاهش یافت اما نقطۀ ذوب تقریباً یکسانی داشتند. براساساین یافتهها بهنظرمیرسد کاهش پذیرش کلی شکلاتهای غنیشده به واسطۀ عطروطعم روغن چیا حاوی امگا-3 باشد.

بررسی اثر نوع آغازگر و فرمولاسیون بر خصوصیات فیزیکوشیمیایی و حسی ماست چکیده با استفاده از طرح مخلوط و روش خوشهبندی دو مرحلهای
در این تحقیق اثر نوع استارتر (پروبیوتیکی و غیرپروبیوتیکی)، شیر (58 تا 80 درصد)، خامه (1 تا 33 درصد)، پودر آبپنیر (3 تا 7 درصد) و کنسانترۀ پروتئینی شیر (6 تا 12 درصد) بر اسیدیته، pH، ویسکوزیته و ویژگیهای حسی (امتیاز طعم و مزه، امتیاز رنگ، امتیاز بافت و پذیرش کلی) ماست چکیده با استفاده از طرح آزمایشی مخلوط موردارزیابی قرار گرفتند و سپس تیمارهای تولید با استفاده از خوشهبندی دو مرحلهای، خوشهبندیشده و موردتحلیل قرار گرفتند. نتایج تحقیق نشان داد که اثرات خطی تیمارهای مخلوط (شیر، خامه، پودر آبپنیر و کنسانترۀ پروتئینی) بر تمامی پاسخهای موردبررسی نمونهها معنیدار بودند، بهطوریکه افزایش شیر و خامه منجربهافزایش pH، ویسکوزیته، امتیاز بافت، رنگ، طعم و مزه و پذیرش کلی و کاهش اسیدیتۀ نمونهها شدند. افزایش پودر آبپنیر و کنسانترۀ پروتئینی شیر نیز منجربهافزایش اسیدیته و کاهش pH، ویسکوزیته، امتیاز بافت، رنگ و پذیرش کلی نمونهها گردید. همچنین اگرچه اثر متقابل نوع استارتر-پودر آبپنیر بر ویسکوزیته و امتیاز طعم نمونهها معنیدار بود ولی اثر خطی نوع استارتر هیچگونه اثر معنیداری بر پاسخهای موردبررسی نمونهها نداشت. خوشهبندی دو مرحلهای دادهها نیز تیمارهای این پژوهش را به دو خوشۀ مجزا تقسیم کرد و نشان داد که پودر آبپنیر و کنسانترۀ پروتئینی شیر بهعنوان جایگزینهای چربی نتوانستند اُفت ویژگیهای ناشی از کاهش چربی را بهطورکلی جبران کنند.

بررسی محتوای فنول و خواص آنتیاکسیدانی عصارۀ صمغ انزروت
امروزه یافتن آنتیاکسیدانهای طبیعی با منشأ گیاهی مورد استقبال محققین قرار گرفته است. گیاه دارویی انزروت متعلق به خانواده بقولات است. در این پژوهش تلاش شده است که تأثیر دو روش استخراج سیال فوقبحرانی و خیساندن با حلال متانول بر ترکیبات مؤثر عصارۀ صمغ بررسی و ضمن ارزیابی فعالیت آنتیاکسیدانی عصاره، همبستگی بین ترکیبات فنول و فعالیت آنتیاکسیدانی نیز ارزیابی شود. نتایج این پژوهش نشان داد که ترکیبات فنول و فلاونوئید کل عصارۀ استخراجشده به روش سیال فوقبحرانی افزایش غیرمعنیداری را نسبت به عصارههای حاصل از خیساندن داشته است (0/05<P)، بیشترین میزان فعالیت آنتیاکسیدانی با روشهای، 2.2-دیفنیل-1-پیکریلهیدرازیل (DPPH)، 2-2- آزینو-بیس3-اتیل بنزوتیازلوین-6-سولفونیک اسید (ABST)، کاپراک (CUPRUC)، فسفومولیبدنم (PMB) و ظرفیت کاهش یون آهن (FRAP) در عصارۀ حاصل از استخراج با سیال فوقبحرانی مشاهده شد که این افزایش تنها برای DPPH، در مقایسه با خیساندن، تفاوت معنیدار نشان داده است (0/05≥P)، نتایج آزمون همبستگی نیز نشان داد که ضرایب برآوردشده بین فعالیتهای آنتیاکسیدانی و محتوای فنولی عصارۀ صمغ انزروت به روش سیال فوقبحرانی در سطح 95 درصد معنیدار بوده است. باتوجهبه یافتههای این پژوهش، صمغ انزروت حاوی ترکیبات فنول و فعالیت آنتیاکسیدانی قابلتوجهی بوده است و استفاده از سیال فوقبحرانی در فشار 100 بار، دمای 35 درجۀ سانتیگراد و 30 دقیقه زمان، درمقایسه با روش خیساندن، علیرغم وجود ترکیبات فنولی و فعالیت آنتیاکسیدانی تفاوت معنیداری نشان نداده است که باتوجهبه هزینۀ بالای این روش، استفاده از روش خیساندن برای استخراج عصارۀ صمغ انزروت پیشنهاد میشود.

غنیسازی رنگدانههای آنتوسیانینی آب انار به کمک رزینهای پلیمری و تهیۀ پودر حاصل از آن به روش خشککن پاششی
آب انار منبع طبیعی شناختهشده برای آنتوسیانینهای طبیعی ازجمله مشتقات گلیکوزیدی دلفینیدین، سیانیدین و پلارگونیدین میباشد. استفاده از رزینها در صنایع مختلف از سابقۀ زیادی برخوردار است. در این مطالعه، از رزینهای پلیمری جذبی برای غنیسازی آنتوسیانینهای آب انار استفاده شد. رنگدانههای آنتوسیانینی موجود در آب انار به کمک رزین SEPLITE®LXA10 جداسازی و غنیسازی گردید. مقدار آنتوسیانین کل در آب انار طبیعی حدود 20 درصد یا کمتر است که بعد از مرحلۀ غنیسازی مقدار آن به 90 درصد افزایش یافت. درنهایت پودر آنتوسیانین به روش خشککن پاششی با بازده 89/6 درصد بهدستآمد. مقدار آنتوسیانین کل حاصل از پودر بهدستآمده در نمونههای پودر غنیشده و آب انار بهترتیب 89/6 و 21 درصد بود. روش غنیسازی ارائهشده برای آنتوسیانینها توسط رزینهای پلیمری باعث حذف مواد جانبی غیرضروری و افزایش کیفیت و شدت رنگ طبیعی آن میشود. تصاویر میکروسکوپ الکترونی روبشی (SEM) ثبتشده مربوط به پودر آنتوسیانین غنیشده، توزیع ذرات یکنواخت و با ساختار کروی را نشان میدهد که در مقایسه با پودر بهدستآمده از آب انار کیفیت بهتری داشتند. اندازۀ ذرات بهدستآمده بین 1 تا 6 میکرومتر و با ساختار کروی بود. باتوجهبه بالابودن قیمت آنتوسیانین و کاربرد فراوان آن در صنایع غذایی و واردات زیاد آن به کشور نتایج این تحقیق میتواند درجهت رفع نیاز صنایع غذایی، دارویی و آرایشی به آنتوسیانین غنیشده موردتوجه قرار گیرد.

بررسی تجربی فرایند خشککردن فیلۀ ماهی با استفاده از تابش مادونقرمز
هدف از این پژوهش استفاده از روش سطح پاسخ (RSM) برای طراحی آزمایش و بهینهسازی فرایند خشکشدن فیلۀ کپور معمولی (Cyprinus carpio) با استفاده از اشعۀ مادونقرمز بود. قدرت تابش اشعۀ مادونقرمز 83، 104 و 125 وات و توان لامپ 250 وات و فاصلۀ آن از فیلۀ ماهی 5 سانتیمتر بود. قطعههای فیلۀ ماهی در فواصل زمانی 60، 120 و 180 دقیقه با ترازوی دیجیتال با دقت 0/01 گرم وزن شدند. قدرت تابش (A) و زمان تابش (B) در کاهش مقدار رطوبت مؤثر بودند و اثر درجۀ دوم قدرت تابش و زمان تابش بهطور معنیداری نسبت به اثر خطی آنها در کاهش مقدار رطوبت مؤثرتر عمل نمودند. در روند تغییرات سرعت خشکشدن اثر تداخلی قدرت تابش و زمان تابش نشاندهندۀ همبستگی این دو متغیر در بهینهکردن سرعت خشکشدن بود. هرچند قدرت تابش در مقایسه با زمان تابش نقش مهمتری داشت. میزان خشکشدن فیلهها در زمان تابش پایینتر و قدرت تابش بالاتر، افزایش یافت. بهطوریکه در حداقل زمان تابش (60 دقیقه) تحت قدرت بالای تابش سرعت خشکشدن فیلهها بهبود یافت. نفوذپذیری مؤثر رطوبت در قدرت تابش پایین و زمان کم کاهش یافت. براساس مدلهای طراحی مرکب مرکزی، تیمار 2 با قدرت اشعۀ 125 وات و زمان 60 دقیقه (رطوبت 1/32 گرم آب بر گرم وزن نمونه، سرعت خشکشدن 0/022 گرم آب بر گرم وزن نمونه در دقیقه و نفوذپذیری مؤثر رطوبت 1/25846E-007 مترمربع بر ثانیه) سبب بهبود ماندگاری فیلۀ ماهی شد.

بررسی عوامل مؤثر بر تشکیل آکریلآمید و بنزو(آ)پیرن در فرایند پخت انواع نان سنتی، نیمهصنعتی و صنعتی
نان قوت غالب مردم ایران و بسیاری از کشورهاست. آکریلآمید و بنزو(آ)پیرن بهعنوان آلایندههای مهم نان بهترتیب جزء سرطانزاهای گروه 2A و گروه 1 طبقهبندی شدهاند. ازاینرو، باتوجهبه مصرف بالای نان در کشورمان و اثرات سرطانزایی این سموم، عوامل مؤثر بر تشکیل این ترکیبات در فرایند پخت نان بررسی شد. در این مطالعه آکریلآمید و بنزو(آ)پیرن موجود در 126 نمونه نان سنگک سنتی، نان سنگک نیمهصنعتی و نان صنعتی (نان همبرگر) جمعآوریشده از شهرهای تهران و شیراز تعیین مقدار گردید، سپس تأثیر عوامل مختلف روی میزان آلودگی نان به این دو ترکیب و همچنین ارتباط بین میزان بنزو(آ)پیرن و آکریلآمید موجود در نان بررسی شد. نتایج نشان دادند اختلاف معنیداری در میزان آکریلآمید انواع نانهای بررسیشده، وجود داشت (0/001>p ). همچنین اختلاف معنیداری نیز بین میزان بنزو(آ)پیرن موجود در نانهای سنگک سنتی و نانهای صنعتی مشاهده شد (0/05>p ). ازطرفدیگر بین دمای پخت و میزان بنزو(آ)پیرن موجود در نانهای سنگک نیمهصنعتی شیراز رابطۀ معنیدار آماری وجود داشت (0/05>p ). همچنین ارتباط خطی معنیداری بین غلظتهای آکریلآمید و بنزو(آ)پیرن در نمونههای نان سنگک سنتی تهران مشاهده شد. بررسی نتایج این مطالعه نشان داد کاهش میزان درجهحرارت و استفاده از روش پخت مناسب میتوانند فاکتورهای مهمی جهت پیشگیری از تولید آکریلآمید و بنزو(آ)پیرن در نمونههای نان باشند.
