بررسی تأثیر افزودن نشاستۀ استیله بر روی ویژگی رئولوژی خمیر و کیفیت نان بربری
هدف اصلی در این پژوهش بررسی تأثیر افزودن درصدهای مختلف نشاستۀ گندم استیله بر ویژگیهای خمیر و نان بود. بدین منظور درصد آباندازی و ویژگیهای خمیریشدن نشاستۀ گندم طبیعی و نشاستۀ گندم استیله و تأثیر سطوح 5، 10 و 15 درصد آنها بر ویژگیهای آرد گندم توسط دستگاه آنالیز سریع ویسکوزیته بررسی شد. سپس ویژگیهای رئولوژی خمیر با دستگاه فارینوگراف و اکستنسوگراف اندازهگیری شد. پس از اندازهگیری جرم و حجم نان و ارزیابی حسی، بیاتی نان بهطریق تست پنل توسط 7 ارزیاب آموزشدیده، دستگاه بافتسنج و میزان رطوبت در روزهای اول، سوم و پنجم اندازهگیری شد. اندازهگیری درصد آباندازی و ویژگیهای خمیریشدن نشان داد که بهترین ویژگیهای ویسکوزیته و کمترین درصد آباندازی مربوط به نشاستۀ گندم استیله بود. نتایج فارینوگراف نشان داد که در تمام تیمارها جذب آب نسبت به کنترل کاهش یافت، اما تغییر معنیداری در زمان دستیابی و زمان گسترش خمیر مشاهده نشد (0/05<P). در نتایج آزمون اکستنسوگراف مقاومت خمیر به کشش، بهطور معنیداری نسبت به کنترل افزایش و قابلیت کشش خمیر کاهش یافت (0/05>P). حجم و حجم ویژۀ نان با افزودن هر دو نشاسته کاهش یافت. نتایج ارزیابی کیفی نان نشان داد که نشاستۀ گندم اَستیله ویژگی خوبی در نان ایجاد میکند. برپایۀ نتایج ارزیابی بیاتی به روش حسی، بافتسنجی و اندازهگیری رطوبت، افزودن نشاستۀ گندم استیله در تأخیر بیاتی نان مؤثر بود. درنهایت افزودن 5 درصد نشاستۀ گندم اَستیله باعث بهبود کیفیت نان بربری شد.

بهینهسازی فرمولاسیون پنیر سفید ایرانی سنتی محتوی صمغهای فارسی و بادام بهعنوان جایگزین چربی با استفاده از روش سطح پاسخ
امروزه رایجترین روش تولید پنیرهای کمچرب، استفاده از جایگزینهای چربی است. کاربرد این مواد در تولید پنیر کمچرب باعث بهبود بافت و افزایش ویژگیهای عملکردی و راندمان تولید پنیر میگردد. لازمۀ دستیابی به فرمولاسیون پنیر کمچرب حاوی سطوح مناسب صمغ با ویژگیهایی مشابه با نمونۀ پرچرب، انجام آزمونهای فراوان میباشد که فرایندی هزینهبر و زمانبر است. روش سطح پاسخ (RSM) ابزاری مناسب جهت بهینهسازی فرمولاسیون فراوردههای جدید میباشد. در این پژوهش، تأثیر افزودن صمغهای فارسی و بادام بهعنوان جایگزینهای چربی بر پنیر کمچرب جهت تعیین بهترین فرمولاسیون با ویژگیهای بافتی مناسب بررسی گردید. بهینهسازی با استفاده از RSM و در قالب طرح سه متغیره در سه سطح انجام گرفت. متغیرهای مستقل فرایند شامل مقادیر چربی شیر (1/4-4/0 درصد)، صمغ فارسی (0/2-0 درصد) و صمغ بادام (0/2-0 درصد) و پاسخها شامل ویژگیهای بافتی نمونهها بودند. براساس نتایج بهینهسازی، نمونۀ پنیر سفید سنتی محتوی 0/18 درصد صمغ فارسی، 0/13 درصد صمغ بادام و 4/1 درصد چربی از نقطهنظر پارامترهای بافت بهعنوان نمونۀ بهینه برگزیده شد. بررسی ریزساختار نیز نشان داد که نمونۀ بهینه، همانند نمونۀ شاهد پرچرب از ساختار بازتری نسبت به نمونۀ شاهد کمچرب برخوردار بود.

ارزیابی ویژگیهای فیزیکوشیمیایی و عملکردی آرد حاصل از دانۀ صیفیجات بومی ایران (خربزه، طالبی، هندوانه، کدو)
باتوجهبه میزان بالای تولید محصولات جالیزی در ایران و عدم استفادۀ صحیح از این محصولات بهویژه دانۀ این محصولات، در این پژوهش ترکیبات شیمیایی، ویژگیهای رنگی و عملکردی آرد هندوانه، خربزه، طالبی و کدو بهمنظور بررسی و امکان استفاده از آرد و پروتئین این دانهها، مورد ارزیابی قرار گرفت. آرد دانهها از لحاظ ترکیبات شیمیایی، ویژگیهای رنگی و عملکردی اختلاف آماری معنیداری با یکدیگر داشتند (0/05>P). آرد کدو و طالبی دارای بیشترین حجم کف بودند. آرد کدو دارای کف پایدارتر، ظرفیت جذب آب، روغن و ظرفیت حفظ آب و پروتئینهای محلول بالاتری بود، بهعلاوه بهصورت معنیداری L* پایینتری داشت (0/05>P). همچنین این آرد پایدارترین امولسیون را داشت و در غلظت 6 درصد ژل مناسبی تولید کرد. در این بررسی آرد طالبی ضعیفترین ژل و بیشترین ظرفیت امولسیونکنندگی را داشت. دادههای حاصل از اندازهگیری ویژگیهای رئولوژیکی، بهخوبی با استفاده از مدل قانون توان برازش شدند. شاخص رفتار جریان در همۀ انواع آرد کوچکتر از 1 بود که این نشاندهندۀ رفتار تضعیفشونده با برش میباشد. علاوه بر این سوسپانسیون آرد کدو بیشترین و آرد طالبی و هندوانه کمترین ضریب قوام سیال و شاخص رفتار جریان را نشان دادند.

بررسی اثر مدت زمان پخت اولیه و دورۀ نگهداری روی ویژگیهای کیفی نان بربری نیمپخته با استفاده از پردازش تصویر
در این مطالعه، نان بربری با استفاده از دو روش نیمپخت کردن و روش پخت معمول، تهیه و به مدت 7 روز در دمای 4 درجۀ سانتیگراد نگهداری شد. نیمپخت کردن به مدت 4، 6 و یا 8 دقیقه و پخت کامل (شاهد) به مدت 10 دقیقه انجام شد. تصاویر نمونهها با استفاده از نرمافزار ایمیج جی ازنظر رنگ، تخلخل و میانگین اندازۀ حفرهها مورد بررسی قرار گرفتند. همچنین ویژگیهای بافت تصویر نان با استفاده از نرمافزار متلب استخراج شد. قبل از تصویرگیری از نمونههای نان نیمپخته، بسته به مدت زمان پخت اولیۀ آنها مرحلۀ دوم پخت تا تکمیل زمان پخت (10 دقیقه) انجام گرفت. نتایج نشان داد رنگ پوستۀ نان بربری نیمپخته طی 7 روز نگهداری تغییر معنیداری نمیکند درحالیکه روشنی پوستۀ نان شاهد بهطور معنیداری کاهش یافت. با مقایسۀ شاخصهای کیفی استخراجشده از تصاویر نمونهها پس از پخت مرحلۀ دوم، مشخص شد نیمپخت کردن روشی مناسب برای بهبود کیفیت نان بربری بوده، نان بربری 6 دقیقه نیمپختشده در مقایسه با دیگر تیمارها از کیفیت و ثبات بالاتری برخوردار خواهد بود.

بهینهسازی فرایند آبگیری اسمزی میوۀ نسترنکوهی با روش سطح پاسخ
روش سطح پاسخ (RSM)، مجموعهای از تکنیکهای آماری و ریاضی برای طراحی آزمایشها، مدلسازی، بهبود دادن و بهینهسازی فرایندها میباشد. هدف از مطالعۀ حاضر بهینهسازی فرایند آبگیری اسمزی میوۀ نسترنکوهی توسط RSM بود. بدینمنظور، اثرات متغیرهای مستقل دما (20، 30 و 40 درجۀ سانتیگراد)، غلظت محلول اسمزی (40، 50 و 60 درصد وزنی/وزنی) و زمان آبگیری (2، 3 و 4 ساعت) روی پاسخها یا متغیرهای وابسته شامل از دست دادن آب (WL)، جذب مادۀ جامد (SG) و کاهش وزن (WR) ارزیابی شد. نتایج نشان داد که همۀ مدلهای بهدستآمده برای WL، SG و WR برای توصیف دادههای آزمایشی مناسب بودند. علاوه بر این، تابع مطلوبیت نشان داد که شرایط بهینۀ فرایند آبگیری اسمزی میوۀ نسترنکوهی شامل دمای محلول اسمزی 31/78 درجۀ سانتیگراد، غلظت محلول 60 (درصد، وزنی/وزنی) و زمان آبگیری 3 ساعت و 59 دقیقه بود. تحت این شرایط، مقدار پارامترهای WL، SG و WR به ترتیب 27/38، 3/53 و 23/85 گرم به ازای 100 گرم نمونه بهدست آمد.

بهینهیابی آزمایشگاهی زاویۀ آیینههای جانبی یک خوراکپز خورشیدی با استفاده از روش سطح پاسخ (RSM)
باتوجهبه اهمیت گسترش استفاده از انرژیهای پاک و بخصوص انرژی خورشید، در این پژوهش یک خوراکپز خورشیدی طراحی، ساخته و عملکرد آن به روش آزمایشگاهی از لحاظ تأثیر همزمان زاویۀ آیینههای جانبی و زمان کاری بر مقدار انرژی جذبشده، براساس مدل سطح پاسخ بررسی شد. مقدار کل تابش خورشید بهعنوان معیاری از انرژی ورودی و افزایش دمای آب داخل ظرف بهعنوان شاخص مقدار انرژی جذبشده درنظر گرفته شد. مدل بهدستآمده براساس آزمون اعتبارسنجی روش سطح پاسخ مورد ارزیابی قرار گرفت و از اعتبار مناسبی برخوردار بود (0/89=R2adjusted=0/74 ،R2 و عدم برازش بیمعنی). از تحلیل نتایج بهدستآمده مدل ریاضی تأثیر زاویۀ آیینههای جانبی و زمان آزمایش بر عملکرد سیستم بهدست آمد. مقدار انرژی جذبشده تئوری و آزمایشگاهی نیز باهم مقایسه شدهاند که متوسط خطای آن در همۀ نقاط آزمایشی 2/75 درصد میباشد. براساس این مدل درصورت تنظیم سیستم در حالت بهینه، انرژی جذبشده به میزان 22/56 درصد افزایش خواهد یافت. آزمایشهای این پژوهش در پژوهشکده علوم و صنایع غذایی واقع در مشهد با طول و عرض جغرافیایی 54 و 36 درجه و ارتفاع 985 متر از سطح دریا طراحی و انجام شده است.

طبقهبندی سیب رددلیشز براساس تغییرات پاسخ آکوستیکی در دورۀ نگهداری با استفاده از تبدیل موجک گسسته و شبکههای عصبی مصنوعی
امروزه استفاده از سیستمهای نوینی که قادر به اندازهگیری غیرمخرب ویژگیهای کیفی محصولات غذایی بوده و قابلیت نصب روی خطوط درجهبندی را دارند، از اهمیت بهسزایی برخوردار است. تحلیل پاسخ آکوستیکی یکی از شیوههای غیرمخرب اندازهگیری ویژگیهای کیفی میوهها بشمار میآید. در این پژوهش، بررسی امکان استفاده از تحلیل پاسخ آکوستیکی در طبقهبندی سیب رددلیشز صورت گرفته است. در این پژوهش، تبدیل موجک گسسته با استفاده از موجک دابوچی چهار در سه سطح، روی سیگنالهای صدای حاصل از ضربه به سیبها در دو حوزۀ زمان و فرکانس برای استخراج ویژگیهای مناسب اعمال شد. توابع آماری بیشینه، کمینه، میانگین، انحراف معیار، انرژی، کشیدگی، چولگی و ممان سوم بهعنوان ویژگی استخراج شدند. با استفاده از الگوریتم شبکۀ عصبی پرسپترون چندلایه، طبقهبندی سیبها براساس تغییرات پاسخ آکوستیکی در دورۀ نگهداری انجام گرفت. نتایج نشان داد که شبکۀ مصنوعی با ساختار 2-1-4 در حوزۀ زمان بهترین عملکرد را داراست. میانگین صحت طبقهبندی برای شبکۀ مذکور 82/1 درصد و شاخص میانگین همساز دقت و حساسیت (Fβ) نیز 0/81 بهدست آمد.

تثبیت مخمر ساکارومایسس سرویزیه بر سرامیک آلومین جهت کاهش آفلاتوکسین M1 در شرایط In Vitro
در این پژوهش، توانایی مخمر ساکارومایسس سرویزیه PTCC5052 در جذب آفلاتوکسین M1 مورد بررسی قرار گرفت. بهمنظور افزایش عملکرد مخمر در محیط واکنش، مخمر تحت فرایند تثبیت سلولی برحامل سرامیکی از جنس آلومین قرار گرفت و فرایند تثبیت مخمر روی آلومین بررسی شد. نتایج نشان داد، تثبیت مخمر زنده روی سرامیک آلومین بهتر صورت پذیرفت (0/05>P). سپس محلول آفلاتوکسین M1 با غلظت 0/2 میکروگرم در کیلوگرم در زمانهای 5، 10 و 20 دقیقه از روی بستر سرامیکی آلومین حاوی مخمر تثبیتشده (به دو روش زنده و غیرزنده) عبور داده شد. نتایج نشان داد میزان باقیمانده آفلاتوکسین M1 در محلول پس از گذشت زمان 20 دقیقه سیرکولاسیون حداقل بوده و حداکثر مقدار این کاهش در میزان آفلاتوکسین M1 موجود به 75 درصد رسید. بستر آلومین حاوی مخمر تثبیتشده بهصورت زنده درمقایسه با آلومین حاوی مخمر تثبیتشده بهصورت غیرزنده، آفلاتوکسین M1 محلول را بهطور معنیداری کاهش داد. نتایج این پژوهش نشان داد سرامیک آلومین میتواند بهعنوان یک بستر مناسب جهت تثبیت مخمر بهمنظور حذف آفلاتوکسین مورد استفاده قرار گیرد
