بهینه‌سازی تولید ارگانوژل روغن‌کنجد و تأثیر آن بر ویژگی‌های فیزیکوشیمیایی و کیفی سوهان

چکیده

هدف از این مطالعه بهینه‌نمودن شرایط تولید ارگانوژل با استفاده از مقادیر مختلف موم و مونو-دی‌گلیسرید و به‌کارگیری آن در فرمولاسیون سوهان بود. تولید ارگانوژل با سطوح مختلف موم (0، 1/67، 5، 8/33 و 10 درصد) و مونو-دی‌گلیسرید (0، 1/67، 5، 8/33 و 10 درصد) صورت گرفت. بهینه‌سازی عددی متغیرهای فرایند بر مبنای حداکثر استحکام ارگانوژل، بالاترین نقطۀ ذوب ارگانوژل، حداکثر ویسکوزیتۀ خمیر سوهان و کمترین میزان روغن آزادشده از سوهان با استفاده از روش سطح پاسخ (RSM) تعیین شد. نتایج نشان داد که افزایش سطح به‌کارگیری موم و مونو-دی‌گلیسرید سبب افزایش استحکام ارگانوژل و افزایش ویسکوزیتۀ خمیر سوهان شد. ازطرف‌دیگر افزایش به‌کارگیری موم و مونو-دی‌گلیسرید به‌طور معنی‌داری (0/05>p ) سبب کاهش روغن آزادشده از سوهان گردید. شرایط بهینۀ تولید ارگانوژل به‌منظور تهیۀ سوهان با کیفیت فیزیکی و شیمیایی مطلوب شامل میزان 8/82 درصد مونو-دی‌گلیسرید و میزان 7/03 درصد موم انتخاب شد. مقایسۀ داده‌های پیش‌بینی‌شده با داده‌های واقعی بیانگر عدم وجود اختلاف معنی‌دار میان آنها و در واقع برازش مناسب مدل پیش‌بینی‌شده برای تولید سوهان بر پایۀ ارگانوژل می‌باشد. مقایسۀ خصوصیات کیفی سوهان با نمونۀ شاهد نشان داد که فعالیت آنتی‌اکسیدانی، محتوی رطوبت و خصوصیات حسی نمونۀ سوهان تهیه‌شده با فرمولاسیون بهینۀ ارگانوژل بهتر از نمونۀ شاهد و میزان خاکستر و روغن پس‌داده‌شده از آن نیز کمتر از نمونۀ شاهد بود. ازاین‌رو، جایگزینی ارگانوژل با روغن جامد در سطوح بهینه در فرمولاسیون محصولات ازجمله سوهان بدون ایجاد تأثیر چمشگیر بر ویژگی‌های کیفی محصول میسر است.
