بررسی ویژگی های اولئوژل تهیه‌شده به روش قالب‌گیری امولسیون پیکرینگ پایدارشده با ذرات جامد کمپلکس صمغ دانۀ ریحان و ایزولۀ پروتئین سویا به‌عنوان جایگزین چربی در خامه

چکیده

باتوجه‌به نقش چندگانۀ چربی در فراورده‌های غذایی، لازم است از ترکیباتی به‌عنوان جایگزین چربی استفاده شود تا ویژگی‌های رئولوژیکی، بافت و حسی محصول کم‌چرب حفظ شود. در این تحقیق استفاده از ساختارهای اولئوژل جهت تولید محصول کم‌چرب موردتوجه قرار گرفته است. جهت تولید اولئوژل از روش غیرمستقیم قالب‌گیری امولسیون ژل پیکرینگ استفاده شد. در تهیۀ پیکرینگ‌ها از ایزولۀ پروتئین سویا (ISP) (1S:0B) و کمپلکس ایزولۀ پروتئین سویا:صمغ دانۀ ریحان (ISP-BSG) در نسبت‌های 1:1 (1S:1B)، 1:2 (2S:1B) و 3:1 (3S:1B) استفاده  شد. نوع و ساختار پیکرینگ به‌کاررفته بر مقدار حفظ روغن در اولئوژل تأثیرگذار بود (0/05>p ). حضور صمغ دانۀ ریحان در نسبت مناسب با پروتئین (2S:1B) باعث ایجاد اولئوژل با ثبات‌تر و استحکام مکانیکی بالاتری شد و اولئوژل از ساختار شبکۀ فشردۀ  مناسب تری برخوردار بود. درنهایت اولئوژل  2S:1B دارای ظرفیت اتصال بهتر با روغن بود. بیشترین و کمترین میزان پایداری حرارتی مربوط به نمونۀ 2S:1B و 1S:1B بود. بیشترین و کمترین میزان قوام به‌ترتیب در نمونۀ 2S:1B و 1S:0B مشاهده شد (0/05>p ). بررسی خصوصیات ویسکوالاستیک، تشکیل ژل در سیستم اولئوژل را تأیید  کرد. باتوجه‌به پایداری و خصوصیات بافتی از بین نمونه‌های اولئوژل، دو فرمول 1S:0B و 2S:1B برای تولید خامه با چربی کاهش‌یافته (5، 10 و 15 درصد) استفاده شد. بیشترین میزان پذیرش کلی در نمونۀ 2S:1B با کاهش 5 درصد چربی حاصل شد که تفاوت معنی داری با خامۀ کنترل نداشت.
