بررسی اثرات نایسین و نانوذرات نایسین به‌عنوان جایگزین نیتریت بر ویژگی‌های فیزیکوشیمیایی، میکروبی، حسی و زمان ماندگاری سوسیس فرانکفورتر

چکیده

در این پژوهش، تأثیر استفاده از ترکیب 500 پی‌پی‌ام عصاره‌های گیاهی مخلوط (چای‌سبز، گزنه و برگ‌زیتون) به‌همراه نایسین (200 پی‌پی‌ام) و نانوذرات نایسین (200 پی‌پی‌ام) به‌منظور تولید سوسیس فرانکفورتر بدون نیتریت موردبررسی قرار گرفت. نمونه‌های سوسیس فرانکفورتر بدون نیتریت در 3 تیمار حاوی 500 پی‌پی‌ام عصارۀ گیاهی+200 پی‌پی‌ام نایسین، تیمارها به‌همراه نمونۀ کنترل (120 پی‌پی‌ام نیتریت سدیم) تولید شدند و پس از بسته‌بندی تحت‌خلأ در بسته‌های پلی‌اتیلنی آزمایش‌های فیزیکوشیمیایی، کیفی، میکروبی و حسی در مدت زمان 45 روز موردارزیابی قرار گرفتند. نتایج نشان داد که استفاده از نایسین و نانوذرات نایسین تأثیر معنی‌داری (0/05<p ) روی میزان رطوبت، چربی، پروتئین و خاکستر نداشتند. نانوذرات نایسین به‌دلیل وجود کیتوزان در ساختار کپسول توانستند از اکسیداسیون چربی‌ها ممانعت کنند و در انتهای زمان نگهداری سوسیس‌های حاوی این ترکیبات دارای پایین‌ترین میزان اندیس تیوباربیتوریک اسید بودند. شمارش باکتری‌های کل، کپک‌ها و مخمرها به‌طور معنی‌داری (0/05>p ) طی مدت زمان نگهداری افزایش پیدا کرد و در انتهای 45 روز به‌ترتیب سوسیس‌های حاوی نیتریت سدیم و نانوذرات نایسین دارای کمترین شمارش باکتری‌های کل مزوفیل، کپک‌ها و مخمرها بودند. شمارش باکتری‌های استافیلوکوکوس اورئوس (2/5 لگاریتم واحد تشکیل کُلنی در گرم) و اشریشیاکلی (2 لگاریتم واحد تشکیل کُلنی در گرم) طی زمان نگهداری به‌طور معنی‌داری (0/05>p ) کاهش پیدا کرد. مشخص شد که سوسیس حاوی نانوذرات نایسین دارای امتیازهای حسی بیشتری در مقایسه با سایر تیمارها بود. نتایج حاصل نشان داد که استفاده از 200 پی‌پی‌ام نانوذرات نایسین در ترکیب با 500 پی‌پی‌ام عصاره‌های ترکیبی می‌تواند گامی جدید در تولید سوسیس فرانکفورتر بدون نیتریت و با ویژگی‌های کیفی مطلوب و زمان ماندگاری بالا باشد.
