تاثیر گوار، گزانتان، کربوکسی متیل سلولز و هیدروکسی پروپیل متیل سلولز بر بیاتی نان بربری

چکیده

در این تحقیق، تاًثیر چهار هیدروکلوئید (صمغ گوار، گزانتان، کربوکسی متیل سلولز (CMC) و هیدروکسی پروپیل متیل سلولز (HPMC) در سه غلظت (0/10، 0/50 و 1% (وزنی / وزنی)) به عنوان بهبود دهنده نان، بر بیاتی نان بربری مورد مطالعه قرار گرفت. برای این منظور بیاتی نان بربری در روز اول، سوم و پنجم نگهداری بررسی شد. نمونه های حاوی HPMC و CMC افت رطوبت کمتری نشان دادند. استفاده از HPMC به میزان 0/5% در نان تازه منجر به ایجاد نرم ترین مغز نان نسبت به نمونه های دیگر شد. دو روز بعد از پخت، CMC از سه هیدروکلوئید دیگر موًثرتر بود و نان نرم تری ایجاد کرد ولی در مدت نگهداری طولانی تر، HPMC نتایج بهتری نشان داد. افزودن هیدروکلوئیدها منجر به حفظ بیشتر نشاسته محلول در آب (WSS) در نان تازه و نان نگهداری شده گردید. نتایج حاصل از آنالیز کالریمتری روبشی تفاضلی (DSC) نشان داد که افزودن هیدروکلوئیدها باعث بهبود پارامترهای حرارتی می شود. اثر ضد بیاتی هیدروکلوئیدها ممکن است به دلیل پیوند آنها با دیگر ترکیبات نان و ظرفیت بالای نگهداری آب آنها باشد. در میان هیدروکلوئیدهای مورد بررسی مشتقات سلولزی در به تأخیر انداختن بیاتی مؤثر تر بودند. آنالیز آماری در قالب طرح کاملاً تصادفی انجام شد.
