بررسی اثر استفاده از ترکیب پری‌بیوتیک اینولین بر ارزیابی حسّی و ویژگی‌های کیفی نان تافتون

چکیده

امروزه تحقیقات درخصوص ارزش تغذیه‌ای و عملکردی نان به سمت بهبود ویژگی‌های فراسودمند و استفاده از پروبیوتیک‌ها و ترکیبات پری‌بیوتیک در فراوردۀ نانوایی گسترش یافته است. در این پژوهش استفاده از ترکیب پری‌بیوتیک اینولین در فرمولاسیون و تولید نان تافتون (به‌عنوان یک نان رایج و پرمصرف در جامعه) مورد بررسی قرار گرفته و اثرات کیفی حاصل از آن ارزیابی گردیده است. بدین‌منظور، درصدهای مشخصی از آرد گندم با اینولین تجاری با درجۀ پلیمریزاسیون متوسط 23 به نسبت‌های 2، 4، 6 و 8 درصد برحسب وزن آرد جایگزین شده و نان تافتون حاصل ازنظر ویژگی‌های کیفی مورد ارزیابی قرار گرفت. بررسی فارینوگرافی نشان داد که نمونۀ حاوی 6 درصد اینولین، بیشترین مقدار شاخص‌های توسعه و پایداری را نسبت به نمونۀ شاهد داشته است. همچنین افزایش اینولین به میزان 6 درصد و یا کمتر بر کیفیت ظاهری و رنگ نمونه‌های نان تأثیر منفی به‌جا نگذاشته و ضمن بهبود ویژگی‌های اسیدیته، جذب آب و خصوصیات بافتی براساس رفتار ویسکوالاستیک امتیاز طعم و مزه نان نسبت به نمونۀ شاهد بهبود بخشید. باتوجه‌به نتایج تحقیق حاضر، استفاده از اینولین به‌عنوان یک ترکیب پری‌بیوتیک شناخته‌شده ضمن افزایش ارزش غذایی و ارتقاء کیفیت تغذیه‌ای نان سنتی، تغییر نامطلوبی در خواص رئولوژیکی یا ویژگی‌های چشایی این محصول نشان نداده است.
