بررسی کارایی ورقه‌های استات سلولز رهایندۀ دی‌اکسید گوگرد بر ماندگاری میوۀ کیوی نگهداری‌شده در سردخانه

چکیده

پژوهش حاضر با هدف بررسی کارایی ورقه‌های رهایندۀ دی‌اکسید گوگرد بر بستر فیلم استات ‌سلولز برای کنترل رشد کپک‌ها به‌ویژه کپک بوتریتیس سینره‌آ طی دورۀ انبارمانی میوۀ کیوی انجام شد. بدین‌منظور انبارمانی میوۀ کیوی تلقیح‌شده با کپک بوتریتیس سینره‌آ در حضور ورقه‌های رهایندۀ دی‌اکسید گوگرد تک و دو مرحله‌ای (به‌ترتیب حاوی 30 و 50 درصد نمک متابی‌سولفیت سدیم) موردبررسی قرار گرفت. پس از 15 روز نگهداری (9 روز در سردخانه و 7 روز در دمای محیط) کمترین ترکیدگی و لهیدگی (4/5 درصد) در حضور ورقه‌های تک‌مرحله‌ا‌ی به‌دست‌آمد که در سطح و کف بسته‌ها مستقر شده بودند. همچنین تا روز 9 در حدود 60 درصد بسته‌ها در حضور ورقه‌های رهاینده هیچ کپک‌زدگی مشاهده نشد. در روز 15 مقدار قند کل، اسیدیته، سفتی، گوگرد باقی‌مانده و مواد جامد محلول در کیوی‌های بسته‌بندی‌شده در حضور دو ورقۀ تک‌مرحله‌ای در سطح و کف به‌ترتیب 9/13 گرم در 100 گرم، 1/09 درصد، 4/75 نیوتن، 0/24 میلی‌گرم بر گرم و 12/21 درصد بود. به‌طورکلی می‌توان گفت ورقه‌های رهایندۀ دی‌اکسید گوگرد عملکرد مؤثری در سردخانه برای افزایش مدت انبارمانی میوۀ کیوی و کاهش رشد کپک خاکستری دارند.
