بهبود خواص بافتی و افزایش زنده‌مانی پروبیوتیک‌های ماست توسط میکروکپسول‌های ژلاتین-مالتودکسترین بارگذاری‌شده با آلفا-توکوفرول

چکیده

غنی‌سازی مواد غذایی یکی از مهم‌ترین راهکارها برای جبران کمبود مواد معدنی و ویتامین‌ها در بدن مصرف‌کنندگان است. در این مطالعه درون‌پوشانی آلفا-توکوفرول در ریزذرات ژلاتین و مالتودکسترین با هدف غنی‌سازی ماست کم‌چرب انجام و ویژگی‌های میکروذرات به‌دست‌آمده (مشتمل بر کارایی درون‌پوشانی، پتانسیل زتا، اندازۀ ذرات، رفتار حرارتی (کالری‌سنجی روبشی تفاضلی) و مورفولوژی (میکروسکوپ الکترونی روبشی) موردبررسی قرار گرفت. براساس نتایج، کارایی درون‌پوشانی و ظرفیت بارگذاری ریزذرات حاوی آلفا-توکوفرول به‌طور قابل‌قبولی بالا بود (به‌ترتیب 97 و 25 درصد). تصاویر میکروسکوپی به‌دست‌آمده از ریزذرات ژلاتین-مالتودکسترین حاوی آلفا-توکوفرول، سطح صاف و کروی و همچنین ترک‌های کوچک در سطح ریزذرات را نشان دادند. علاوه‌بر این، ریزذرات دارای پتانسیل زتای منفی بالا (27/29- میلی‌ولت) بودند که نشان‌دهندۀ نیروی دافعۀ قابل‌توجه بین میکروذرات و پایداری خوب آنهاست. باتوجه‌به نتایج، مالتودکسترین به‌عنوان یک درشت‌مولکول پری‌بیوتیک بالقوه زنده‌مانی لاکتوباسیلوس اسیدوفیلوس را در طول زمان نگهداری افزایش می‌دهد. ریزذرات پروتئین-پلی‌ساکارید موردمطالعه، برای درون‌پوشانی آلفا-توکوفرول مناسب هستند و به‌طور بالقوه می‌توانند کاربردهای متعددی در صنایع غذایی داشته باشند.
